I have 40 or 50 pounds of freeze dried grated cheese. I'll be honest, I've been a little terrified about how I would rehydrate it. I figured probably mostly casseroles that I could just drown in water 😅 Thank you SO much for the lesson in how to make it work!!!!
Thank you for this. There are so many posts on FB groups that dispute one another. Using your methods plus trusting just a small handful of trusted mentors my 6 week freeze dried blitz has been perfect for sustaining two of us for over three months of living in a camper. We have two months remaining. I will run out of cheese first. I had no time to process shredded cheddar. I did however finely grate Asiago, Parmesan and Romano. I had two half gallon jars. It has been perfect to replace the processed kind with the green shaker lid. The lid fits a regular sized mason jar opening. It's so convenient without using any refrigeration. I didn't rehydrate for pasta, sprinkling on toast, Caesar salad or casseroles and it's a fantastic flavor profile. When we get back home cheese will be a month long process because your technique here is promising. We haven't reconstituted our milk yet because it's been readily available in small quantities. I do have a gallon though and will use this method and measures. You have been exceptionally helpful to guide this process.

The towel you used looks just like 'table cloths' that I have. You could use a square of that. I found that Butterball Turkey burgers work very well. I FD without cooking first. Re-hydrate and the just cook in light olive oil and they are perfect. Horseradish sauce instead of catsup.
Commercial shredded cheese has potatoes starch to keep it from clumping. Could you shread or slice block cheese and sprinkle a bit of corn starch on the cheese to remove the oil.
To me, anything less than whole milk is white colored kool-aid. With that said, the ratio are near the same. If you FD whole milk, you can add extra water to make 2%, 1%, or white Kool-aid (skim milk)

Pretty easy, Just pre-shredded cheese dumped in a tray.
Does the milk powder to water ratio remain the same with whole milk and 2%? Which did you use? I couldn't read the label. TY
