As for the onions, to keep from crying you are not supposed to cut the root of the onion which is the bottom part. You can cut it in half but do not cut it off, once you cut that part off it causes the onion to bleed hence making you cry. Give it a try you’ll be amazed it works. 👍🏽 Learned that from Gordon Ramsey.
I swear I used to cry so much as a kid when cutting onions 😭 but now as an adult I eat a lot of onions and I never cry now when cutting them which is really weird now that I think about it 🤔
Regarding crying about onions, I was told at work yesterday that if you put the onion in the freezer for a few minutes and that helps with the crying. I’m trying it today!

Regarding the onions, I noticed that when I store my onions out in the produce baskets opposed to refrigerating them, the chemical it releases burns my eyes more. So storing them in the fridge helps and I also used to rinse my onion in cold water once I gave it the first slice in half, it seems to slow down the release and then just work quickly lol. I’ve heard ppl freezing them first. Now, if my sun glasses are downstairs, I’ll wear those. You need goggles though that definitely will help!

I experimented last night and once I cut the onion in half I ran it under cold water as I was peeling the outer layer and it did not burn my eyes once I started slicing it. I did have ny regular glasses on as well, not sure if that work as they are not close fitting to my face like my sunglasses.
what works for me: prep onion just like you did....but super sharp knife, and SLICE not chop to keep the juice from flying..........I also wear my "reader glasses" as much to not cut my fingers as to keep any juice from my eyes. I love you idea with the pastry puff dough and while I've been a bit lazy, I am going to include leek in my pot pies from know on. thank you for this great video............

for the onions, don't cut the root and also after cutting in half, rinse them under cold water, the water will help stop the compounds ( from the onion's cells and then its amino acids get altered into lachrymator compounds ) from leaking out of the onion and therefore stop the chemical reaction between its sulfuric acids and your eyes.
ONION FIX: Turn to you right and set up on the counter to the left of the faucet. Turn the cold water on and chop away! The motion of the water will draw the suffering onion smell away from you 😢😊
Crust ! Crust ! AND More Crust ! Chicken pot pie should have crust on the bottom as well as the top ; otherwise, you're just eating vegetables with a little crust.
