What if you choose to know EVERYTHING about math? Because physics is just applied math, you have all knowledge of teleportation, time travel, alternate universes, etc. ALSO, because chemistry is just applied physics you would have full knowledge of all the chemical behaviors of everything in the universe. AND, because biology is just applied chemistry, you would know about the entire genome of every living thing. THAT MEANS that you would know everything about psychology because it's just applied biology. All that in mind, that's just ONE of "a few" things you can know everything about.
The thing about "applied x" is that you have to do the applying. You can know everything about math and not know how to apply it. Or even if you do, it may take years and years to get some result, because it's just work.

If that's the case, I'd probably go with the body, because I would embarrass the crap out of myself the other way, and the other way would make an interesting change assuming it wasn't permanent/people were on board with it.

Assuming the question doesn't mean going through hormone therapy and the numerous surgeries, if you were to wake up the next day in the body of the opposite sex then your voice would also change as your vocal cords are a part of your body. Going along with this assumption you could have both the voice and the body of the opposite sex because they are one in the same.

Personally, ii'm not to heavily set as a female, but would love to have a deeper voice. If for nothing else than the range. Females can work to change their body shapes, but males can easily change vocal range, so ii see where there'd be a pretty split line.
