As a gay guy I can understand why many people wouldn't want to change their sexuality (regarding the second question), I've already been asked if I would take a pill to change my sexuality if there was one, and whilst perhaps at the beginning I would have considered doing so (coming out of the closet can be hard, yo), now my answer is invariably 'no'. The idea of changing a part of me that I am now proud of just seems wrong, and I imagine the same would apply to straight people. Plus, many people are alredy in relationships, perhaps even already have kids, and changing their sexuality would really mess up their lives.
(but of course, there are probably homophobic people who answered that answered that question too ¯\_(ツ)_/¯)

AND, because biology is just applied chemistry, you would know about the entire genome of every living thing. THAT MEANS that you would know everything about psychology because it's just applied biology. All that in mind, that's just ONE of "a few" things you can know everything about.

I mean if you think about it, choosing the body of the opposite sex would change your voice. Assuming the question doesn't mean going through hormone therapy and the numerous surgeries, if you were to wake up the next day in the body of the opposite sex then your voice would also change as your vocal cords are a part of your body. Going along with this assumption you could have both the voice and the body of the opposite sex because they are one in the same.
As a transman I would happily choose the body of the opposite sex without hesitation.
