Served it with garlic bread (the tar tar went on top of the bread slice with some butter) in addition some cheese and gherkins, it would go rather fine with some vodka, my papa said.
Both methods look good and I love the ingredients. I think I might like to serve it to a guest un-mixed. The appeal in that for me is you can work with the creamy yolk and adjust the seasoning to your own liking. Thank you, Chef! ( I just made your Cordon Bleu recipe last nite...outstanding!)
I visited Poland once, about 14 years ago. I found it to be a very lovely spot of the world. I was with my husband (business trip) & we met a very kind elder couple who invited us to their home for dinner. The lady showed me how to cook pierogi. That was when I learned that a recipe is simply a suggestion. It was the highlight of our visit. They were just so gracious & kind. It felt like we were old friends & I miss them.
I love steak tartare! I make mine with round steak and I do use a food processor. I think it turns out fine. I don't use all those ingredients; just the steak, egg, onion, salt and pepper. I serve it on buttered Westphalian pumpernickel bread, topped with hollandaise sauce. Add a Caesar salad on the side, and you have a complete meal.

There is no actual proof to that, don't be afraid of beef. most of the toxins store in the fat and organs. you have nothing to worry about muscle meat.
What’s not to trust? Just keep this practice cold, and clean. Use a clean grinder, that’s kept in the fridge, use gloves, add and acid to help “cook” the meat and voilà. Trust yourself more than others, friend.

Falls or stands with which part of the cow you grind up. Most will use filet mignon or upper butt of the cow, but I prefer to use lende, not sure of the English name. It is the triangle like piece when you butcher a cow. A little more tough, but a lot more flavour. And the toughness does not matter much when you grind it up anyway.

The thought of raw meat freaks me the hell out. I used to literally cook meat until it was black when I was a kid. But today I'm conquering my fears and I'm gonna try the tartare with egg yolk. A thong here in the Charente, France is to ask for it ‘aller retour’. This is steak tartare ready mixed then made into a patty and very quickly flashed on the hot grill for a second or two before serving.
This looks great and yummy. But I am too scared to try it. Raw minced beef will produce alot of bad bacteria etc unless cooked.. Not to mention a raw egg. What safety measures are needed with the meat ?
I guess, you can make the seasoning in advance and mix the tartar on demand. Separate seasoning and beef should be good for a day or two in a fridge, right?
It is perfectly safe to raw beef. Best to grind it yourself immediately before you serve but supermarket mince in CAP packaging is fine. I've eaten raw supermarket beef many times and has no issues. Our kids were eating it too, well before two years of age. No one has ever become unwell.
