      It all ends up the same in your stomach, that's why I usually just do temaki when making sushi with the fam.

    Oh Marc, this really is perfect for me. I’ve always preferred simple sashimi over all the complicated rolls with so many ingredients and sauces dripping everywhere. I do love some maki too, though, and have always loved oshinko and single vegetable filling. Well except for my guilty pleasure sweet potato tempura with eel sauce. Thank you for the recipes and for validating my “less is more delicious when each ingredient is perfect” sushi preference. I’m seen as boring.
    I seem to be an outlier in my area, as restaurants have huge numbers of rolls with all kinds of crazy fillings, but it can be hard to find simple rolls like yamagobo or kanpyo. If it’s not fresh cucumber or avocado, they may not make it. And that’s a shame, but I can and should make it myself. Thanks!

      This is how most rolls are here in Japan, but that doesn't mean there's anything wrong with the more elaborate rolls in the US. I think of it kind of the like the difference between Mexican and TexMex. They're each a product of the people and locations where they're from and they're foods I crave from time to time.

    I'm pretty good at making futomaki but poor at making hosomaki🤣. My hosomaki always tend to be a middle maki after all. I love kanpyo hosomaki very much🎎🍑❣
