A Proper Greek Salad (No Vinaigrette! No Lettuce!)

Recipe from The Don't Panic Pantry Cookbook, AA Knopf, 2023.
1 medium tomato (10 ounces or so), cut into large bite-sized pieces
1/2 a small or 1/4 medium red onion, cut into fairly thin slices
1/2 cup kalamata olives, pitted or not, depending on preference
1 english cucumber, peeled and cut into bite-size pieces
1/2 teaspoon dried oregano, plus more for sprinkling
3 tablespoons extra virgin olive oil, plus more for drizzling
salt and freshly ground black pepper
3 ounces feta cheese
crusty bread for dipping
In a bowl, combine the tomato, onion, olives, cucumber, oregano, and olive oil. Season with salt and pepper, keeping in mind that the olives and feta are already quite salty. Gently toss all of the ingredients together. Transfer to a serving bowl and top with a slab or dollops of feta cheese. Drizzle the feta with more olive oil and sprinkle on some more oregano. Eat immediately, with bread for dipping.

Thanks for showing the real Greek salad! I am from Armenia and that's the salad we eat every day in summer. We don't call it Greek though. Almost exact same ingredients, except we use fresh purple basil instead of dry oregano. No lettuce, no dressing except oil and salt and black pepper.

Sometimes (a lot of times) the simplest recipes are the absolute best. The recipes I get the most compliments on are just like this, simple.
Good ingredients require very little

This is one of my summer staples, minus the feta cause I don't like it. It makes a great side dish for sandwiches too. It could be the nostalgia talking but my favorite low effort summer meal is a tomato sandwich. It's the most low effort "Oh god it's so hot we're gonna die' sandwich ever. It's just bread, mayo, super awesome garden tomatoes, salt, and pepper, sometimes to make it more healthy I'll leave out the mayo and use mashed avocado instead.

@@ginsoakedgirl4 you have eaten something else, not feta. Feta is made of goat or sheep milk, period. There is only one world where we all live in and where names matter, because they help in communication.
