As a youth more than 50 years ago my mother would make 40 to 50 pizzas when our wrestling team got together at my home. And those times are still talked about amongst us with great and fond memories.

Hi Vito, I love your videos and seeing how you prep for big parties. I'd love it if you would make a video on doing a pizza party at home for 10 people. I always get confused how to manage the dough - a pizza party can take an hour so - so how is the last dough not overproved compared to the first dough? And how do you maintain temp in an ooni woodfired oven for the whole time? I've done it before but the last dough was so soft and I think I choked the oven and the temp kept dropping. I need advice from the meastro! Thank you x

I have a question, what kind of spatula is the one you get your dough balls out of the box? Is it flexible? I can only find spatulas with the same shape but are thick and sturdy for the barbecue. What i should look for? The only similar spatulas i find is the ones that are used for plunging holes on house walls🙃
Yes. That’s exactly what you can use and that’s probably what Vito uses. A Putty Knife. They can be found in any hardware store. You can also use a Dough Scraper. But I’m pretty sure Vito is using a Putty Knife. It’s not uncommon. Maybe there are food grade hybrid, putty knife dough scrapers. I’m not sure though.
the one in this video probably is a gi metal pizza spatula, not sure if you can get that in the us tho

Thank you both! I just noticed the link in the description. Its a little pricy for me to spend almost 34€ for just a spatula, keep in mind i'm not a professional and i m not going to use it every day. So,i am going to risk it and purchase an inox putty flexible knife from my local store. We'll see how it goes. Thanks anyways!
You have some great comparison videos! I learned a lot from your channel. Can you please do a comparison with different amount of protein % but otherwise similar flours?
I just went to a specialist Italian food store and found 9.5%, 11% and 13% protein flours, all 00. The 11% one was marked "pizza" but in the past I got better results by using about 1/3 to 1/2 9.5% AP flour (mixed with 11.5% 00 pizza flour). Not sure why, maybe because I use a regular home oven. Thanks!

Hi Vito, I need some advices about building up an oven. In your opinion should i go with a wood fire brick oven or one that equips with a gas burner? How long does it take to warm a wood fire brick oven with no gas burner to reach 700F? Thank you so much for great stuff you've been sharing.

Im making pizza few month now and tried some different methods now. But i have to know why people use a poolish or biga!? Is it good if u need to make a lot of pizzas? Im used to make the dough the day before. (Neapolitan style, 1kg flour ~600-700ml water, 1-2g yeast and salt) let it rest for 24hours and few hours before making the pizza i form the pizza balls. With a poolish i separate some steps, but in the end the Ingrediens are the same and fermentation should be all good anyway. So basically whats the advantage doing it with a poolish? Im always interested in bringing the pizza to a new level!^^ PS: Love the channel!
the flour you put on the counter when stretching the pizza, do you reuse that or throw it away?
Maybe a pizza with peppadew peppers. Your friend at the Las Vegas pizza competition mentioned it. I just bought a jar on Amazon. I'm curious how they taste.

Hi vito- great video as always. However, I have a pizza event coming up that l'Il be doing pizzas from 12 midday all the way through to around 10 or 11 pm on the night. What's the best way to prepare the dough given that I'll probably ball up around 9.00am? By tea time the balls will be just overproofed. Help please.
