You bought Claudio a GIMBAL! Though, it was only helmet cams after the first half. It looked like the gimbal was having issues mid-ride: @ 6:32 - camera was pointing at the ground.

gopro sucks in forest areas. Something with all the greenery i think.

its the amount of individual frames moving, all the different colours, the fact he's going fast too makes it very hard for the camera to have everything constantly rendered.
Using a gimble is a smart choice, now you need to equip a gopro under the saddle of the first bike, those shots from the rear will be insane on steep descents!!

Gimbal chest cam was GREAT! Super stable. Look like it quit when Loic's breaks failed. When it worked it was really smooth. They had to rig that right? There is no standard model that just clips into the chest mount???

What is the best resolution and fps for filming on a bike?
4k - 2.7k - 1440 - 1080 - 960 or 720.
Higher is better, obviously, but it requires more expensive equipment and only a few hours of footage can take up a huge amount of storage. 1080p is the sweetspot, probably. As for fps: 60 fps is a great improvement in smoothness over 30, but it takes up twice the storage. If you think it's worth the extra smoothness, go for it.
