Nailed the cook on that elk. I have the same issue with my caribou European mount. It is mounted to the wall in a now unusable corner of our living room.
That elk is a dream of a lifetime! Did you get it scored? Wow! You briefly showed your roosters’ possible aggression building up. Let me tell you, BE WARE!! When our daughter was 4 we got some Dominique chickens. Boss rooster was puppy dog gentle and she could pick him up. The other one, Bubba, got to doing the same things that yours is doing. I noticed lessened fear of me coming around. Then it happened, and, well, I’m a one swing type of guy and if I don’t like the attitude at the time I’m seeing it?! Bubba swung once and fowled out!
The "weird sideways dance/walk thing" is a courting AND challenge behavior when its courting it will sound off with a growley trill sort of thing when its a challenge its usually quiet He is tryin to either assert dominance or get his rocks off

Hey LFG idk if you plan to keep any of the roosters but if you do I would start holding them more frequently so they don't turn aggressive, small pecks like your rooster did will progressively get worse.
Our rooster was not aggressive at all until we introduced 3 Americanas to the flock he became aggressive towards me an my wife and a couple of the other chickens. Interesting animals i love the eggs though
I have the same forward looking elk at my house and had the hardest time finding a place for it to hang cuz the boss wouldn’t let me put it over the fireplace
Deer and ducks would be removed and the bull would be hanging above the stairs asap... its much easier to find a place for smaller mounts... what a bummer ... your bull of a life time and you had to hide it at the office..
