Without gravity the water drifted away and scattered, some of it evaporated by the high intenisity rays that are normally canceled out by the atmosphere. Evaporation requires energy from light, not physical heat. That being said, it woudn't be supprising if we say tons of tiny ice chunks floating around in the aftermath (The water evaporating from the light energy, and then frozen when fully exposed to the vacuum of space). That would have completed the picture.
