- Hi folks welcome to the day's video, today I am making Banbury cakes which is a very old recipe from 1947, In the video I showed you how to make the filling, and the puff pastry recipe link is down in the description. Banbury cake recipe
The recipe is for making 8 Banbury cakes
1st followed my recipe for making the puff pastry, then you need half of the pastry block'

weight of Puff Pastry needed 500 grams
You want 204 grams of mincemeat and 136 grams of cake crumbs, mix together into a paste,
Roll out your pastry so it's around 3 to 4 millimetres thick, cut out squares or rounds and they want to be around 5" square or round which every the case may be, Now divide the paste into 8 and put it on the top of your pastry Fold up like a little pasty turn over and just flatten, Rest for around about 20 minutes then cut the tops with 5 lines, wash with water and dip in to Castor sugar or granulated sugar, Once you have rested the Banbury then for the baking 25 minutes at 225 Celsius to 230 Celsius and till the golden Brown, do check halfway just in case you need to turn round in the oven or turn down the temperature

I'm from the US I've only heard of Banbury cakes from a poem The Cupboard by Walter de la mare. They look yummy 😋

Can remember 55 years back in the bakery my mum worked the mixing of all the old cakes to make the banbury, I didn't at that age 10 realise what was going on re mixing the old cakes but I do particularly remember liking banbury cakes, I haven't seen them in any bakers for years.
It's a very odd cakes Banburys and Eccles cakes, that a have 10 different types of recipes for both, in my shop we only sell Eccles cakes, so by making the Banbury cakes video recipe, I can now test out on the customer 😋 😀
@@crazybaker1 I mentioned Eccles not banbury, I should have said banbury so edited post , well I am 65 and getting forgetful lol. Loving the channel as it brings back good childhood memories in the bakery with my mum and it inspires to have a go at baking

If you dont have cake crum what else can you use. Its over 40 years since I have had a Banbury cakes I would love to make some but we dont have stale cakes. Thanks for your video Bob
Best way is to use old supermarket cakes to make the crumb 🙂

curious to know about the addition of cake crumbs - I can't find another recipe for Banbury cakes that includes them...
Yes this is a very old recipe 😋 bare this in mind, some parts of the country are different, in saying that 5 of my recipes books are all different and are all from the 1940's, In the bakery I have been making them the same way for 44 years 😀 laters Steve 😉
@@crazybaker1 thanks for getting back to me. I though it might be due to changes over time. I imagine with the addition of the crumbs the fillling is a little denser than say a Eccles cake.
What cake crumbs do you use?
All types of cake 🎂 not yeasted products like buns and Danish products 😀

Everything as long as it's been it's fine 🙂
Can you buy cake crumbs or do you just buy a cake and crumble it?
Most buy cheap cakes that are dry and crumb up that's the best way, in the bakery we use all the old cakes we don't sell, so basely recycling 😀

Banbury Cakes come unsurprisingly from Banbury and have been around since at least the 17th century. The first recipe is in The English Huswife and dates from 1615.
It's just a funny story 😄 🤣 😂
