Don't worry, Google can't easily workaround this because it is a Safari/iOS feature and could only be blocked by Google if you would be using a different browser engine (Chromium for example) which as of right now does not exists on Apple devices.
The way I do this on Android is to play the video in Firefox (no need to request desktop website) and then just turn off the screen for a moment and turn it back on, and then finally press the little play button in the corner of the Firefox’s media notification.
You can do it with the app as well. just start a video swipe up to enable picture in picture, then swipe the top of the screen down to pull up your notifications. The picture and picture video will pause, but you can press play while in notifications screen then lock the phone it’ll continue playing.
Or just pause the video from your Apple Watch, then after lock your iPhone you can still play from the Apple Watch and continue listening even with your iPhone locked.

I think it's ridiculous you have to pay for what should be a basic feature. Thank you for the tutorial but it feels slimy you have to pay for this or go out of your way through a web browser to do it rather on the actual app itself.
My workaround: load video in the YT app, swipe to home screen and the video plays PIP. Lock the screen but then swipe down from the top right to open your control centre and hit play there. Lock the screen again, and presto!
