    Ingredients
    Kadai Mushroom
    Mushroom - 400 gms
    Oil - 2 tbsp
    Whole Spices
    (Cinnamon, Clove, Cardamom & Bay Leaf)
    Cumin Seeds - 1 tsp
    Onion - 3 nos. (chopped)
    Ginger Garlic Paste - 2 tsp
    Tomato puree
    Salt - 1 tsp
    Turmeric Powder - 1/4 tsp
    Chilli Powder - 1 1/2 tbsp
    Cumin Powder - 2 tsp
    Coriander Powder - 2 tsp
    Capsicum - 1 no.
    Onion - 1 no.
    Garam Masala - 1 1/2 tsp
    Water - 1 cup
    Ghee
    Ginger
    Kasuri Methi
    Green Chilli - 2 nos. (slit)
    Method:
    1. Chop the tomatoes and grind them into puree.
    2. Add oil to a kadai and add the whole spices, cumin seeds, onions. Saute till they are golden brown.
    3. Add the ginger garlic paste and tomato puree. Cook for 15 mins till the puree is totally reduced to thick gravy,
    4, Add salt, turmeric powder, red chili powder, cumin powder, coriander powder and mix well.
    5. Once the gravy starts releasing oil slightly, add the cleaned and sliced mushrooms.
    6. Cook for 5 mins and add capsicum & onion wedges.
    7. Add garam masala powder and mix well. Pour some water and close the kadai.
    8. Cook for 10 mins to make sure the oil is separated from the gravy.
    9. Check for seasoning and add salt if required. Mix well.
    10. Lastly add ghee, ginger juliennes, crushed kasuri methi and slit green chilies.
    11. Give it all a quick mix and garnish with a coriander leaf.
    12. Simple yet the tastiest Kadai Mushroom curry is ready to be served hot with any Indian bread of your choice!
