Thank you for this recipe! My hint: Bake it on parchment paper -- peels off with no spatula and/or use a tortilla press (super fast and easy). Method: I folded a piece of parchment paper in half-- put the ball of dough in the center (inside the paper) and used a tortilla press to get a really perfect tortilla. You could also roll it between two sheets of parchment paper. I baked with the parchment paper still attached on both sides. The tortilla peels off easily the paper; there was no clean up-- and I plan on using the paper a second time.

What a beautiful dog! I have a shortcut for this recipe, but only if you have a masticating juicer like the omega 8006. Basically, juice the florets, then lightly steam/microwave the pulp and then add your eggs. No wringing out anything! :)

The number of tortillas depends on how big a cauliflower you use and how big you make the tortillas. Burrito size will make around 3-4. taco size will make 6-8. I wouldn't recommend frying these because they are too delicate to move easily to a frying pay after they have been formed.

I like doing provolone cheese taco shells better. piece of cheese on parchment for 55 seconds, pull out and fold and you're done. perfectly crispy without all the work of cauliflower.
Hey Ken, I noticed that your "tortilla's" stuck a little bit even though you sprayed the foil. Next time try using parchment paper sprayed with a little non-stick spray. I think you will find the tortillas will be much easier to remove.

My question is; is there anyway to fry them in a skillet? Maybe make them crispier? Regardless, it looks great as it is!

Just tried this today and Loved it!!!! don't think I will ever buy store bought tortillas again. so much more flavor the flour or corn tortillas.
Next time I want to try adding some herbs or extras to the mix, maybe some finely chopped up spinach or a small amount of blended black beans.

I'm a Sriracha fiend - and I put a squirt in almost everything. I think I'd also add a little cheese to help as a binder - and - for flavor.
