Base Gin Recipe (1sh Bottle):
700ml vodka at 60ish %abv
15g crushed juniper
15g uncrushed juniper
8g coriander seed
8g lemon peel
0.7g angelica root

I add my citrus skins after distillation for a couple hours of maturation to limit the amount of louche effects from the citrus oils on the distilled spirits.

A good gin with fresh squeezed orange juice and a splash of tonic is *definitely* in my top 5 cocktails. It's also the only cocktail I drink in any season, warm or cold.

I use this base with black cardamom pods in the product, soak for a couple of weeks adds a slightly smoky taste, and a slight tint.

Merry Christmas Jessie and Famz. I used this recipe plus tweaked with some extra mint 🤤🤤 to create my Blue Gin for the family 😍
For anyone interested, I soaked the finish product in Butterfly pea flowers, its a gorgeous blue colour, but changes to pink when you add tonic.

Those of us in the Northern Hemisphere are thinking, "Isn't it kind of cold for gin drinks?" Then we realize that you are in the beginning of Summer in December. The Christmas season is a whole different thing in New Zealand. It's time to pull out the swimsuits when you decorate the Christmas tree. That being said, take some time off, Jessie. You deserve it. You work harder making content every day all year than most of the rest of us do in our 9 to 5 jobs. See you next year. Tryed your idea of the molt lollies in the rum, it was brewed 1st of Oct and it now testes bute.
I used black strap molasses, brewers molt and brown sugar, tastes spot on.

I get you... For myself, I've always had the keenest respect for those who write they've always got something they're putting away to age while I used to make a batch and was done -- it was so much work, just done with it. Unfortunately, once I experienced the joys of an all grain bourbon I just never did another neutral. Thanks for giving me something to think about if I ever decide to cross that line again! Cheers,

Been watching your vids for about a year now and I love your passion for what you do. Unfortunately I live where this sort of hobby is illegal but I do what I can which is make wine.
Which brings me to the subject of this message...I make wines from all the normal stuff but have dabbled with other nontraditional ingredients such as grits and oatmeal to make some very tasty wines.
Got curious about what all I could ferment into a wine and started looking at things that are available here on my property.
Beauty berry is quite prolific but growing up we were always told not to eat them. Upon doing research I found they can be used for jellies and wine. The wine turned out amazing! Hints of apple/cotton candy maybe but definitely different. I did a search and I see that that you have them there in NZ. Would love to see these turned into a brandy or used as a botanical like juniper in a gin to get your thoughts on this.
Do you take requests? Because I just learned that tomato wine is a thing and I would LOVE to see you make a tomato wine and distill it before I start my next spring garden!
In the new year could you try making a spirit from maple syrup please?
