    Hi Adam, never seen you so happy. I have been caravanning regularly for the last 15 years on a at least 2 X 1 month holidays per year. It always puts a smile on my face too. Love your work fella. Keep it up, and thanks heaps.

    So, I'm a cooking fan, and I followed Alton Brown for years. To start those coals, grab a piece of news print...put some cooking oil on the paper, put it in the bottom of your chimney. Put the lump on top of the paper, start the paper on fire. Should get those coals fired right up.
    Those fire starters work, but you can make your own for much cheaper. Block of parafin wax, a cardboard egg carton and lots of sawdust or better yet, planer chips from a local mill. Pack sawdust/chips into the paper egg carton as tight as you can, pour parafin on top. Cool, cut, use.

      I don’t keep newspapers around and I don’t like the pile of ash left over that flys all over when you pick the chimney up. Those fire starters work great to me and are convenient to keep in my supply box.

    Very nice park, your making me like the Gulf area never been before, love Florida. We are cold up here in south jersey, but enjoy my seasons. Your on to something with the combustible engines, I would hear them when your in your shop and just put off as a hydraulic pump or a piece of your equipment

    Hey Adam you can put half a load of coals in the bottom then add more on top and let it catch instead of putting such a huge fire under your hand. Great video, I'm always jealous of the ocean, sea food and warm winters then I see your bugs and heat in the summer and I think I'm ok where I'm at :) I really want a Pit Barrel to try out one of these steaks.     Just a heads up. Any one looking at big lagoon state park I'd recommend avoiding it until they get off their butts and fix all the trails and the tower. The hurricane destroyed alot of it and they haven't fixed it still....so don't go until it gets fixed, there is nothing to do besides sit at your camper

    I find that the lumpwood stuff like that burns hotter but faster. :-) Great for grilling

      When used in a ceramic grill like my Kamado they burn for a very long time.

    Use news paper with a little bit of vegetable oil on it. Place the news paper under the chimney and light it. The oil keeps the newspaper burning long enough to get the charcoal started. News paper is safe. They use soybean based ink.

    2 sheets of newspaper works great in the chimney and is cheaper. That is what I use in my chimney.

    Saw those steaks at Sams , didn’t get it , but was wondering how long you cook it on each side , I’ve never grilled a piece of meat that thick .

      Any piece of meat, and thickness, grill it until the blood starts coming through most of the top of the meat and flip it. Take it off when the blood starts coming out the top side. That's prefect med rare.

      You'll only see a restaurant grill any steak that thick if it was ordered rare/medium-rare. They would have to butterfly cut it to cook it more than medium-rare (assuming you're a savage that doesn't like red meat). The way many restaurants cook something that thick is sous-vide, and then finish cooking it on the grill to char the outside and give a nice the crust. It's probably the best method if you want conventionally grilled style of steak, since it won't dry out still be cooked perfectly even throughout.

      The Perdido name comes from the Perdido River, where Spanish explorers did get lost. It's called Perdido Key because the river flows into it.
