You got yourself a nice salmon mate. Good in fish cakes or fillet it and use the bit up on the shoulder of the fish. Which is a lighter colour meat and marinated for a few hours in lemon, garlic and green ginger. Fantastic eating that way. I don’t know why people throw them back.
