I think your infrared thermometer is off by like 150 degrees. If it was about 500 degrees the parchment would've burned completely. Fahrenheit 451 is the ignition point of paper, parchment is no different.

I really like the parchment paper idea better than cornmeal.
I would definitely do the parchment paper next time!
Also experiment with scattering the stone with polenta (rather than the parchment paper) like the Italian Pizza Ovens do to give a better result.
Haven't cooked pizza since, but will give that a try next time!
