You can drink regular (not bottled) water at this kind of top-end restaurants. They wouldn’t give you unfiltered or unpurified regular tap water and risk making anyone sick. Also, by law restaurants have to serve free water if requested, so you don’t need to pay $8 for a bottle of water, unless you want to.
I like how they incorporate Asian elements Korean/Japanese in the first restaurant

dude. your content is really good. good calm and clear presentation. i've only been to pujol, one time, and it was reallly good and i would do it again. where are you based from or grew up? I was born in Mexico City and was there until 8, but then moved and now live in USA. I haven't been able to travel as much as I wanted but I'm going to Ixtapa in a couple days.

To pick one out of two, I will go with your suggestions.
tap water is fine to drink in most "nice" places since water filters are common and widely available, just dont go and drink straight from the faucet.
in my house, i have a water filter in the kitchen sink, but not in every other faucet, also, most fridges come with a filter or you can buy one at a supermarket.
in fancy restaurants they dont serve tap water because they dont want to, because they would rather sell you more stuff.

This is not really mexican food, la buena comida mexicana de verdad la encuentras en las calles en los puestos de la esquina en las fondas, en los mercados.
Si pero tambien Mexico ultimamente se esta metiendo en la Alta gastronomia, se necesita para aserle rivalidad a los franceses, italianos etc
La comida Mexicana no es solo la comida corrida ni la tacos vendidos por callajeros. DF es un capital del mundo. No lo olvides.
