Since you're confused with the CAMRA TRICK I'll explain it. Its just a camera man taking a normal video shoot, no camera was attached to him. In premier pro or after effect you can either Track motion or Stabilize motion. the RED SQUARE attached to the face, the editor tracked his face movement and rotation using "track motion" and attached the red square to it. the THIRD Person Perspective, its a normal video shoot but with "Stabilize motion" you can fix a point of your choice to the middle of the screen or anywhere else, if you notice that sometimes his head or shoulders always in the middle.
You can achieve the third person effect with software alone. edit: I got to the part where you gave your opinion about how this might work, yes your right but his face stops being the central reference when the edge of the original raw picture is reached, that's why his face is sometimes not in the middle (the frame of the original picture is of course bigger than the crop rectangle that follows his face). Also you don't need AE for this a small program can be written fast and do the same thing. But I imagine lobster prod used professional tools lol
