    My mom would do a broccoli and cheese stuffed meatload with normal grocery store cheddar and it came out fine. Just gotta make sure there is nowhere it can leak out.
    She made it like a cinnamon roll, but with meatloaf instead of dough and then cheese and broccoli in place of the cinnamon and sugar. Roll it up. Seal the ends and edge REALLY WELL. Also, like any stuffed food, don't overstuff it.

    Took your receipt and changed a little. The idea with the baking form and resting overnight ? Great idea. Next time I'll make a meat Gugelhupf (classic German baking form) .

    I love the addition of both beef broth and mirepoix.
    I do recommend the bacon weave coating. Over and under weaving of bacon strips wrapped around the loaf.
    The coating allows for a quicker cook as the fat from the bacon keeps the loaf moist, and the higher temperature crisps up the bacon.

    I Do mine close to the same but may i suggest instead of a loaf wrap it in the plastic wrap into a cylinder then make a bacon weave and wrap it in that. Will add awesome and stop it from falling thru the grates not to mention its excellent to vac seal and freeze for a quick meatloaf burger when pressed for time.

    One thing I've never understood: freezing the meat before grinding. Maybe it's needed for low quality table top grinders, but whenever I grind stuff at my job nothing is par-frozen beforehand. And it comes out fine.

    Cheese stick! I made an Italian meatloaf once that had bell peppers and stuff in it, topped with marinara and mozzarella. But I like the idea of just incorporating all that into the loaf itself. Now that I know about high temp cheese it can happen! Awesome video

    Iv done 2 smoked
    Meatloafs since I started smoking meats mid 2022. They have both been excellent. I did a jalapeño mix in one. No sauce needed as it’s gets suck a good bark on it.

    I did a bacon wrapped meatloaf with pretty much the same recipe. I used peperjack cheese instead of cheddar. Made a weave of bacon, set the loaf in the middle and wrapped it up. Glazed with sauce at the end.

    FYI pro tip! Put a log of jalapeño cheese and or jack in the middle! It will change your life 💯🔥🙃 Cutting into that gooey madness is special!

    That looks superb. The shape of the meatloaf gave me an idea which may or may not work - that meatloaf would be great wrapped in pastry like a beef wellington.

    I've made smoked meatloaf a few times and it's always way better than I expect. I haven't tried it with cheese and jalapeño, though. That's next level thinking! I gotta try that!

    Meatloaf looks amazing!! Challenge!! I had a turkey/ham/ ground beef and cheese meatloaf before but never got the recipe. Meats were layered and divided with cheese. It was absolutely delicious!!! Should give one a shot!

    I mae a meatloaf using the Italian pork and fennel sausage recipe. I just added breadcrumbs and eggs for a better bind. I smoked it and the whole family loved it

    I tend to dislike meatloaf after being served it so many times as a kid, but you've got me convinced to try this out! Also the dinosaur roar on the offset door had me rolling. 😂

      Good meatloaf is a wonderful thing. I do it in the oven in a loaf pan is it usually comes out very good. A million recipes out there... make your own mix with what you like... lot's of garlic, etc. One of my favorite things ever is a meatloaf sandwich!
      PS - Checking internal temp is important with ground meat.... be sure to get it to 160F. I didn't notice Chud mentioning the internal temp but perhaps I missed it.
      Try it! You might be very pleasantly surprised.

    Meatloaf hasn't been boring since I started smoking it. Now that the kids are gone, I make individual ones. A little smaller than your baby one. Vac them. Pop them into a kettle of boiling water. Just as good as the day I made it. Oh, and I don't make traditional meatloaf either. No two are ever the same. Lol. This one sounds delicious. Thanks for the idea.

      The high temp cheese isnt necessary just use a bacon weave to hold everything together and smoke it 250-275 works fine just allow it to cool a bit first . Nice crispy bacon on the outside and gooey cheese on the inside

    One thing I like to do is shape the meatloaf in the same pan I'll use to make the bread that way its the perfect size. I usually use 1/2 pullman loaf pans for it.
