I’m aware this is from long ago. But I’m pretty sure that “pasta” wasn’t entirely intended to be healthy as it is more for people with celiac disease and can’t have regular pasta. I can’t read the labels from this video alone tho.
A gluten intolerant person would rather have gluten free pasta than no pasta at all in spite of the marginal difference in quality. Not everyone is a militant religious zealot when it comes to food.

I think Americans butcher Mexican cuisine even harder than we do Italian lol. We just throw cumin, paprika, and oregano on meat then stuff it in a tortilla. That's the extent of American Mexican food.
Are you referring to the Mexican food made with intestines and cactus mush? I always get a good laugh when people say “I like this restaurant because it is authentic”. Most Americans wouldn’t be able to stomach “real” Mexican food.

I've been in Italy twice. Once for my junior year abroad in Bologna and once teaching Renaissance art in Florence. My favorite way of eating spaghetti (De Cecco, of course) is aglio e olio.

But La Molisana has the same price range, so if you can get your hands on both, go with La Molisana), but a tad better is Rummo for the sane price. Voiello is also something you can try, so is Barilla al bronzo (red packet). Would prefer the others though. And although Italians pretend to eat high quality, the most sold pasta is Barilla (the „bad“ one in the blue packet). And then we have artisan/crafted pasta like Felicetti or Martelli which you cannot compare to a mass product, obviously.

French and Italian wines don't have a ton in common, including the grapes its made from. I like Italian wine more myself. If you prefer French, I suggest you have French food with it. 🙄
I went and tried Barilla's chickpea rotini the other day after watching the video of you two in Whole Foods. The cooked rotini looks the same but the texture is completely different so you can't prepare it like you traditionally do. Me personally, I find that making it with thick, nutty sauces like Indian masalas can result in very good dish. But if you try to cook it Italian, your head will conflict once you taste it as you'll expect an Italian result but when you taste it, it's just not the same.
I'm starting my binge watch so Eva can teach me the way! Already got got wine and one acceptable box pasta saved. Thank you for the videos. Much appreciated.
In Italy, I think you know, we use pasta made with corn flavor for people has intolerance (gluten for celiaci, non so come si dica 😅). It isn't so bad, it tastes a little like polenta

I found this channel by accident and am so glad that I did. I have so much about authentic Italian cooking as different from Italian American cooking. My dad was from Calabria so learning from Eva is such a pleasure, learning about food in my dad's native land. Try the Pasta All"Assasina, it's delicious!

I'm more than happy to indulge in her insight into authentic Italian cuisine, and would love to hear her critique on how it is different from what we're presented here in the states but she borders on obnoxious snobbery at times. Every country has its way of doing things, multiple ways of doing things depending on the region and those minute differences provide a beauty all their own. And that variety is beautiful. I love watching you both. I am half Italian and it is endearing for me to see Eva cooking the way she does. My grandfather and I sit and have the first Panatonne and coffee every year right after Thanksgiving. The best one I can find is from a store here in Cincinnati called Jungle Jim's. If you are both ever I the Cincinnati area and Eva wants to find some good foods to remind her of home, come to Jungle Jim's. They have a good selection of foods imported from Italy. It is where my wife goes to get the important ingredients for my Father's day Lasagna! Keep making the great videos I am going to get my Grandfather set up on his smart t.v. to watch you guys, he will love your channel too. Ciao!
If you want carbs and can't eat gluten you have rice. I'm fairly sure it's gluten-free. They say mochi is glutinous but it doesn't have actual gluten, it's just the texture. Tteokbokki as well, it's very chewy and won't kill her. Both are made out of rice flour. Italian food has a fair amount of rice dishes as well. There's some types of noodles that are made with beans, that are also traditional to Asian countries. Which means they're not bad and people actually eat them, but you won't find them in Italian cooking because Asia is Asia and Italy is Italy. What I'm saying is, don't waste your time with pasta alternatives. Find other sources of carbs. There's quite a few.
@@nodezsh Gluten-free pasta made with rice and corn can be quite good, though. Quite a few mainstream Italian brands produce it. Rummo's is exceptional.

I eat red lentil pasta, but I don't treat it as a pasta dish but like a thing of its own. the kind we get where I live has a nice nutty taste and does not turn out rubbery. I'd never try beet noodles, though 😅
Simple, Eva: 3 to 4 minutes in New York or San Francisco [sea level], 5 to 7 minutes in Denver [over a mile up]. Water boils at a lower temp, up there, see? Longer boil time required.
You put pasta in the water AFTER it reaches the boiling point. So no matter your altitude, pasta is going to take the same amount of time to cook. [Source: I'm Italian]

I'm more than happy to indulge in her insight into authentic Italian cuisine, and would love to hear her critique on how it is different from what we're presented here in the states but she borders on obnoxious snobbery at times. Like the "French" wine section isn't "real wine"? You're gonna play the superiority card over fermented sad juice?
Every country has its way of doing things, multiple ways of doing things depending on the region and those minute differences provide a beauty all their own. And that variety is beautiful. Her haughtiness is more self important than it is educational. And I think this channel could do better. I'm hoping they do.

I love watching you both. I am half Italian and it is endearing for me to see Eva cooking the way she does. My grandfather and I sit and have the first Panatonne and coffee every year right after Thanksgiving. The best one I can find is from a store here in Cincinnati called Jungle Jim's. If you are both ever I the Cincinnati area and Eva wants to find some good foods to remind her of home, come to Jungle Jim's. They have a good selection of foods imported from Italy. It is where my wife goes to get the important ingredients for my Father's day Lasagna! Keep making the great videos I am going to get my Grandfather set up on his smart t.v. to watch you guys, he will love your channel too. Ciao!

This is exactly the reaction my celiac mother has to the non-wheat pastas she's only able to eat now. Dying with laughter.
If you want carbs and can't eat gluten you have rice. I'm fairly sure it's gluten-free.
They say mochi is glutinous but it doesn't have actual gluten, it's just the texture. Tteokbokki as well, it's very chewy and won't kill her. Both are made out of rice flour. Italian food has a fair amount of rice dishes as well.
There's some types of noodles that are made with beans, that are also traditional to Asian countries. Which means they're not bad and people actually eat them, but you won't find them in Italian cooking because Asia is Asia and Italy is Italy.
What I'm saying is, don't waste your time with pasta alternatives. Find other sources of carbs. There's quite a few.
@@nodezsh Gluten-free pasta made with rice and corn can be quite good, though. Quite a few mainstream Italian brands produce it. Rummo's is exceptional.

I eat red lentil pasta, but I don't treat it as a pasta dish but like a thing of its own. the kind we get where I live has a nice nutty taste and does not turn out rubbery. I'd never try beet noodles, though 😅
Simple, Eva: 3 to 4 minutes in New York or San Francisco [sea level], 5 to 7 minutes in Denver [over a mile up]. Water boils at a lower temp, up there, see? Longer boil time required.
You put pasta in the water AFTER it reaches the boiling point. So no matter your altitude, pasta is going to take the same amount of time to cook.

Eva is all about Old School Italian cooking. Fresh, Home-cooked foods and Eva despises most foods in America. She tells it like it is and you cannot blame her for her feelings of resentment of how Italian foods are reinvented in the USA. Eva's Husband should be grateful she doesn't beat him with Stale Italian bread for making her eat half of the stuff she tries!
