Separating the wrappers was my appointed task. It was such a joy to be around the grown folks that didn't mind a child helping out. Some adults simply see children as a nuisance, even ones that have great interest in crafting food.

In Texas we call that egg rolls...spring rolls is when you use rice paper with pork belly, shrimp, noodles, and vegetables.
Over here in Edmonton, Alberta we call it spring rolls. The rolls made with rice paper, pork, shrimp and vermicelli are called salad rolls.

As a kid in a Vietnamese household, I used to peeled the spring roll wrappers too but as an adult I’m actual rolling the spring rolls. However, our family doesn’t use the concoction yours does, we used egg yolk to seal the wrappers. It’s nice to see others Vietnamese family’s method of making egg rolls. Your mom is awesome! Great job!
