Highest and best use for an eye of round! Only 1 suggestion: I’d put the meat directly on the horseradish cream to let them mingle, then the peppers and lettuce.
That looks fantastic! Going to smoke a beef roast today on our pellet smoker. We are newbies but excited to see how it turns out. Wish we had a slicer but then we would have to clean it. I suspect that is not real easy so I guess we will use a knife.
Tom, that is truly a magnificent sandwich! Great recipe, and I can do the whole thing with one minor exception: most of us ordinary mortals don’t have a slicer like that sitting in the kitchen, and those paper-thin slices contribute significantly to the tenderness of what would otherwise be a bit on the tougher side. And that would really compromise our ability to replicate this recipe. I do well with a slicing knife, but nowhere near that well.

Great videos! Just giggled though about the roasted peppers cutting the fattiness of the beef hehe That eye of round has almost no fat (but probably cuts the cream cheese down). Still want to try it out, have an old slicer I hope cuts thin enough. Going to sub Smugglers hot mustard for straight horseradish (still has a major kick, just mustard added). They sell it in Eagle River, Wisconsin, they are pretty famous for knocking people's socks off LOL! Keep up the awesome videos!

My grandfather had a slicer like that in his café which he used to slice cold meats for his customers with. Nice video , I wanna try this !

You can get a meat slicer for about $100… it doesn’t slice quite as thin as a commercial one would but it does the job. I use it for beef jerky.

Just a word of advice. Peeling the skins and emptying the seeds out of the pepper works better under running water.
