Hello guys I just wanted to let you all know I am acidified foods certified thru NCSU (North Caroline State University) which means I am very well knowledge based when it comes to canning methods. I have been canning personally myself since 17 and before that I helped my grandma can tomatoes and pear preserves. I have canned every since then, I have taught many to can. I have been taking my canned goods to the farmers markets for years and follow my cottage laws for my state. You have to have process authority letters for each type of foods you are selling if it’s not a “safe foods” I am very aware of the rules by the FDA and USDA. The man who taught my class Fletcher wrote the book for the FDA. I won’t be putting any leftovers random in a canning jar. I would only use foods safe for canning. Thank you for any concerns.
I am very new to canning. I used to help my parents as a kid, but that was 30 years ago. We never did meats, only pickled vegetables and hot sauces. I was glad to find this video. I had tried a couple weekends ago to can red beans with sausage and ham. I left an inch head space in pint jars. I cooked them for 90 minutes. Only one did not seal. I had covered the jars completely and left a little water over the top, like we used to do when I was a kid. The canner liquid was very oily, so some liquids escaped during the canning. I washed the jars, wiped the rims (there was a black grime along the lip of the jars under the ring), and haven't opened the sealed jars to test them. I'm actually afraid to - in case I screwed something up. Watching your video, I'm thinking I screwed up by adding too much water. The jars look the same as the day I canned them.
They should of been pressure canned and not covered in water as pressure canning works by using pressure from steam. From what I am understanding from your comment I wouldn’t use them. There are so many videos on using this method. With pickled vegetables you have vinegar, hot sauces are mostly fermented so they are safe in other ways. Meats all need to be pressure canned. Beans need to be pressure canned. Follow all the instructions and use the National Canning Website nchfp.uga.edu/#gsc.tab=0 for times and pressures based on your altitude. Please do not eat them if you did follow the instructions based on the the type of canner you used.
I didn't know there were 1.5 pint tall jars! OMG that's perfect! And I finally bought the canner cuz of this vid showing these tall jars. LOL. I have the Instant Pot Max which I adore but sometimes it would be nice to do more at once.
Thank you for the video. I suggest an improvement for your videos. I suggest you record silent video, then narrate it later in editing. You can get your dialogue just right and do it when the house is quiet and get your audio just the way you want it.
Hi Dawn! I see you are using a pint and a half jars (24 Oz). Do you pressure can for the same time it takes quarts (32 Oz) which is 90 mins? I just want to see if I can also use pint and a half jars and use the quart pressure time in recipes.
Hello Peggy that’s what I do I use the same times as quarts. I just find for my family the pint and half works great. I don’t find these jars often enough, I do have about 12 cases but I am still using a bunch now. Thanks for asking. All the best.
Yes you can absolutely anything you like. A lot of times I keep unseasoned to add my seasons once I’m cooking with it. Like soups, pastas etc casseroles. Sometimes I add onions and pepper’s depending on what I’m using it for.
Well I’m sure they did, I did the time for a quart jar and everything is just fine. Don’t use the jars then. We like the jars for our family and we had plenty of them. Thank you for sharing.

Oh I was just thinking of you as I was in the high tunnel picking tomatoes are still producing a lot so far. It’s the more controllable environment. I am working on the technical bugs. It’s been a challenge and six hours on the phone with apple. 😝 which causes me stress as I’m not a sit down kinda person. Haha. I hope you got a lot canned and or dehydrated. I have several videos to get out. I am sorry the tomatoes didn’t like all this rain. See last year we had hotter weather and a whole lot less rain. No I haven’t not, if it a cold pack I don’t warm the jars but I do warm them in my oven if I’m using hot ingredients. I’ve been canning since I was a girl and it will happen every now and then. I have been selling my pickles for years and when I took the acidified school at NCSU the teacher who was Fletcher wrote the book for the FDA and he said when you are dealing with a lot of jars you will have that. I have even seen the jars he spoke of in the class warped and still have shards of glass from the machines. It could of had a tiny fracture in it or perhaps it had a Knick. I’m so sorry that happened but it has happened to me in the very large canners and also in the ball canners too. Hopefully it was one in a million. I wish all the best and happy canning.

This pressure canner is Presto not a Nesco. I do have a lot of Nesco small kitchen appliances.

So does it take an hour and a half to cool down once it is ran its 90 min.?
Yes it does take awhile to cool down.
Have you had any problems with jar breakage by not putting your jars into canner to pre warm. I had one break.
