For the time being you could put some carpet or a trapdoor on the fences of the animal pen to get in and out without having to worry they escape (Disclaimer: I haven't watched the whole thing yet, so this might already be done)

I thiiiiink the reason the weird light thing happens with the snowmen is possibly bc they’re being placed on snow carpet and not a snow block (or just a whole block)? I could be totally wrong but it’s the only thing i’ve really caught that COULD be the reason
You could add another row of concrete around the middle of each lollipop to make it more 3D and look more like lollipop edges. Either way they look absolutely amazing you’re a Minecraft artist
For the snow farm, if you go at it from an eye level angle, you can double the snow. Try to hit the layers in a line, kinda line them up so when the first one is mined, the second one is mined instantly after it. Hope that helps!
