I agree with you, Gemini 53. Same here! Our recipes are basically the same--it's my cooking technique I need to tweak a bit. I had actually laid off using mozzarella cheese because I didn't like the "stringy" consistency. Little did I know I just needed to cook my cheese sauce a little bit longer. I love watching videos like this. I learn SO much!
I will certainly try making it your way next time chef.. I've always made my ruxin first the added milk. Never have I heated my milk added the flour and melted butter. And cheese sauce consistency is a must..

Chef Jeff, Sir I just put your Mac and cheese in the oven, used 7 different cheeses, clean out the deli drawer on the fridge. I must admit, your method taught me several pointers Sir, all of which I used. I did use 1 pint each heavy cream and half and half so the richness from that and all the cheeses I put in the Mac dish should be awesome. My grandmother used to make the best mac and cheese with commodisie cheese and chicken N' dumplins with that chicken in a can. I'm 62 years old and still miss her cooking.

Thank you for sharing this! I made this recipe similar and it was great. I used corn starch instead of flour so my roux did not lump. I use sour cream, although I have made mac n cheese with cream cheese before. I used the same cheeses as you and also added monterey jack with some season-all, onion powder, paprika, and a pinch of sugar to balance out anything too bitter or too sharp. It doesnt make a it sweet at all. I've had tried fancy cheeses like gruyere and gouda before, but the ordinary basic cheddar, mozzarella, velveeta, and monterey jack cheeses taste better in my opinion. Yessir! That’s it! I know everybody has their own preferences for this classic dish, but yours is EXACTLY the way I like it. Our recipes are basically the same. I prefer creamy mac-n-cheese AFTER its baked. Some people’s tend to come out of the oven dry, stringy, too firm, or clumpy. This is what it should look like. Enjoyed watching. Great job!🥰👏🏼👍🏼

Hi Chef- I made this last night in advance for a family get together today- I did everything except the last step with cheddar and baking in the oven. What temp do I set it at today and how long do I heat it? I want to pull it out right before we are gonna eat… so thanks in advance for your tips… you know this is my go to Mac and cheese!!!
Looks good I promise I'm sure it good too, but I let my cook 30 minutes, no more than 35 in the open for a more firmer and crisper around the edge Mac cheese. I just like mine more firm, not loose.

You made it the night before and then baked it? If so, did it mess up the consistency? I would think it would sog the noodles.
