Cmaj7(6/9), D string ---7 fret, middle finger 8 fret 4. C6/9 --- fret 2 (EADG) Index and Ring finger 5. Arpeggio chords, may snap on top the string

I love that 6/9 sound , its beautiful I need to get get it on my vocabulary. In case when only using the higher 4 strings do you omit the 5th or 7th on that 6/9 chord?

yes! You can omit anything you want to bring out the upper structure, choice is yours!

I recommend going to a guitar shop and trying them all out for yourself! Any guitar can play any style. Its all about what feels best in your hands!
