We all know about Notorious and Tupac, but there are plenty more examples. Some of them got attacked on stage. So security for these artists are not playing around. It's about getting them off the stage at all costs, out of sight, away from the danger zone. And remember, most of these "security guards", especially from the late 90's, early 00's, weren't trained guards. They were just dudes with muscles. It's not like they were following any ethical code. They were literally just given a single job: Keep the artists safe at all cost.

If you stop playing, but the guitar hits a monitor it's going to make sound. The strings will still ring out. There's still sound, but it doesn't play the melody. Which is why the guitar stops as soon as he picks it up and touches the strings. Then the melody starts as soon as he starts picking again. Try looking a bit closer, or try it yourself (carefully ofc), and you'll learn that pretty quickly.
