I never knew how good I had it growing up in a small town in Jalisco, Mexico. My mother was a master cook. I have rarely eaten food as well cooked as she used to prepare day after day. A great variety of complex regional recipes. It would take months for her to cook the same dish again. I wish I had told her what a privilege it was to eat her food when she was still alive. All ingredients, fresh and local. Intense aromas. Intense flavors. Joyful food to go with my joyful childhood.

thank you! my parents originally are from Oaxaca, a small pueblo about 45 minutes away from the city. up until about 7-10 years ago it was still untouched by modernization and tourism, it makes me happy to see people liking my native culture, i used to be embarrassed by it in my teens

Mexican food is so deep. There’s so many plate’s that Americans don’t know about because it’s not “popular”. Yet in Mexican homes they are very common dishes. Us Mexicans have everything from seafood to drinks to desserts to appetizers candy pastries you name it. Street food is just a small portion that is what most Americans are used to.

Very true. Most Americans have never had fideo, for instance. This is extremely common in Mexican homes. But, you never see it at restaurants and, unless Americans grew up in Mexican neighborhoods eating dinner in Mexican homes, most of them have never had it.

The literal rawness of the spices, meat, cheeses as well as other ingredients along with cooking customs that haven’t really changed throughout the centuries just gives a taste like no other. There’s a reason Mexican food is one of the best in the world

My sister went to India on business…food is good but very overwhelming on spices and curries. She did like the mangos a lot. Mexican food is her #1 and she has traveled to many countries.
I’m from Hermosillo, Sonora; I get what he meant. In many places there flour tortillas are made from scratch, northern beef in Mexico is the best, they cooked most often by grill with real charcoal, sauces and veggies are usually fresh not from cans or bagged. I’ve lived in Indiana, Michigan, Boston and California, I’ve never found something close to those flavors. 😊

@@jjacpt708 No, this is recognized by every Mexican and others who share the same opinion. I’m from Michoacán and I agree, it has amazing food, but when it comes to these places in particular, you will find moles, barbacoa and other delicacies that are from those states in particular. Chocolate also happens to be used a lot in oaxacan food.

@@ohedd a bit late but yes, you might need to build up to some foods because your digestive system will not be able to take the amount of chilli and acid the food contains to start, but that will only upset your stomach or give you the runs at most
If your gut flora (bacteria living in your gut responsible for breaking down your food and nutrients) is not as diverse as that of someone born for example in Mexico, you could even get sick for your body not being able to process some foods or bacteria your gut doesn't have.

I just recently went to Mexico & my goodness, how amazing authentic Mexican food is.
I've traveled to 19 countries and the best food in my opinion is Mexican food. My favorite tacos are from Mexicali!

@smoketj4830 I've had TJ tacos and they are delicious! But the hand made flower tortillas from Mexicali are unmatched. Most people go to the commercial tacos spots but those aren't necessarily the best.

Im American and Mexican is my favorite food. Its too bad I wont be able to back to Mexico or bring my kids there to experience it due to the danger to white people. Sadly cartels and subsequent corruption make it a no go. Even the last safe tourist spots like Cancun, tourists are being murdered. So sad.
I have a theory that Mexican food exists even in parallel universes where there is no Mexico. I can't imagine a reality without it somewhere.

When we first met, my wife hated Mexican food. But after a few dates I realized she had never tried Mexican food. Just TexMex and California mex. So I cooked for her, and I brought her to my Mom, my grandmothers, my Tias, and they sealed the deal. But now that's all we eat! I want some fried chicken every now and then!

One thing people in the US don't realize is how much better the quality of meat is in Mexico. A simple steak fried or grilled with nothing more than a pinch of salt immediately blows away every steak I've had in the US. Same with cheese, it's impossible to find cheese of the quality that can be found in Mexico.
Meat from local animals living a regular life is just so much more flavorful than the factory farmed stuff you get in most grocery stores here in America. It’s a radically different flavor
I think you’ve been buying your American beef from Walmart. USDA? Yah well there’s thousands of local butchers who sell grass fed beef. Mexico doesn’t do the factory raised beef like the US. But we do have organic/grass fed. It’s just that the factory raised beef is cheaper and easier to mass produce. But Americans do have both. Mexican cows don’t taste better just because they are Mexican. Your just eating grass fed beef from a cow who wasn’t pumped with growth hormones. And yah that is better
Not at all, there's no health codes and a lot of the meat I saw in Mexico (when I lived there for 6 years) was clearly contaminated not to mention they tend to feed grain to their cows rather than grass which makes the meat taste terrible imo.
@@kevinprzy4539 There absolutely is health codes in Mexico regarding meats, food, and dairy. One of my favorite parts about visiting is enjoying the higher quality meats and vegetables.

I’ve experienced first hand homemade Mexican food and it’s incredible.
People don’t understand that Mexico is one of the few places in the world where many of the ingredients originated and were domesticated, from fruits vegetables, spices, grains, leaves such as tabaco, chewing gum and animals.
Like the Amazon’s jungle, Mediterranean coast, Central Asia, west Africa, and China.
The rest of the world uses them but many don’t realize where or how they got to be part of their culture.
Many people think of pasta and tomato sauce as Italian national dish, however pasta was introduce to the Roman’s via the Arabs, and Tomato reached Italy after the Spanish brought it back from Mexico.
Also Mexico uses Onions and garlic which are Asian in origin.
Every region in Mexico has it own dishes....In Yucatán there is a say: you can eat a different dish every day of the month (cochinita, poc-chuc, papadzules, relleno negro, releno blanco, frijor con puerco, longaniza, lomitos...etc)

There is a whole conversation we can have here. In Mexico food is part of the culture. Something you even brag about. If you take any Mexican phone you will find dozens maybe hundreds of pictures of food he has eaten. And those pictures are shared in social media to friends and family like saying “look what I’m eating right now”. And it is not about price. The place, the price, the ambiance doesn’t matter. It is the food.
“Las mejores carnes, son de Sonora”; it means: The best meat, comes from Sonora, a northern state that borders with Arizona. Hermosillo is the capitol city of the state. The best flour tortillas for your burritos, or your carne asada, and many more delicious treats 🇲🇽 🇲🇽🇲🇽🇲🇽

We call the dried meat "machaca" and the best actually comes from Tacupeto. Our hot peppers are "chiltepines".And when we drink, we drink bacanora (the best too).
"machaca" is from Northeast Mexico (Nuevo Leon, Tamaulipas and Texas)

@@carlosmante What you know as "machaca" is basically pulled/shredded beef also known as deshebrada around here. Sonoran style machaca is completely different. Is like dried cecina that is shredded and mixed with spices. The end product is an ingredient that can be used for many dishes and not an actual dish by itself.

And the thing about it is over in Mexico some of the best cooks are not found in fancy restaurants, over there some of the best food is cooked by homemakers who learned the art and recipes from their mom and grandmother.
And a lot of extra love and dedication goes into it because they are cooking for their families rather than the masses.

Travelling to other countries really opened my eyes too how much stuff you do and don't have back home when I went to Bali the level of art was insane on every corner you had the best sculptures and artist I have ever seen our best artists was their average artist and for every 1 we had they had 30 more and were proficient in so many styles, the art was just ingrained into their culture
The Mexican food in California's Central valley is amazing because of the fresh ingredients. The more you go to LA or the Bay, you lose quality. I lived in all 3 areas amd by far, the central valley is top notch when it comes to fresh food.
When we go to Mexico, the food is just as amazing but in a different way. The meats are delicious, the unpasteurized cheeses are the best- the corn and tortillas are insanely good.
I've never been to Oaxaca, but my family is from Los Altos de Jalisco, and the food there is just edible love.
Having said that, authentic Indian Food and Chinese food are also in the running for best food on earth.

as a Hermosillo native that has tralvel US and Canada I can definetely tell you guys i take my local cuisine every day of the calendar, is not about regionalism is just straight facts i have experience a lof of type of food in the western culture, from street vendors, fast food chains to michelin star level, none of them got my Manina (Grandmother) hand. There is nothing in this world compared to our carne asada, we are #1 in beef bc in the sonorean dessert cows gotta walk more to find green spots for food, that makes the muscle of the cow unique of this area, the frijoles puerco (red-colored beans) are a must in every sonorean breakfast, with a huevito revuelto (scrambled eggs) with any protein, can be sausage, ham, potato, local chorizo or machaca (the best shredded beef ever existant), even carne asada (it is very common the day after of a cookout we use the carne asada left to make eggs with beef), also night food is unbeatable, Dogos (Hotdogs), Burros Percherones (a giant burrito), Mexican Sushi (more like a fried maki), Lorenza (Tostada with cheese and beef) and Gringa (Quesadilla with Beef can be carne asada, chicharron or carne al pastor that is pork), also on the morning Taco Fish, Taco de Cabeza (Cow Head Taco), Barbacoa, Goat Birria, and Cahuamanta (Stingray, its used to be turtle since the 1980s is just stingray but there is some parts you can ask to get the full ride with Tortuga Caguama and Mantarraya) for sweets you can close the deal with a Coyota from Panocha or Pilonzillo a sweet bread crunchy dessert. I hope more people can enjoy this delicatence of food and if you guys want to partner up to open a food truck i can be your right hand right away this freaking food can be bomb in any part of the world

Hermosillo, Sonora is known in México as the place with the best meat out of all the country. And rightly so, the meat is on another level, anything cooked with meat will taste amazing. Cabrería is the best meat cut.
Being oaxacan I have yet to find food that can compete with my grandma and Tia. I was very fortunate to have tasted something that’s hard to describe, belly bliss.
As a Mexican who have lived in USA, and now France, also visited a dozen of countries, I realized how LUCKY I am to be born and raised in México 🥲🇲🇽❤️
I went to Vegas 20 years ago to gamble and we got hungry, we went to the buffet, the Mexican food was delicious, the guacamole and nopales were also super delicious. I asked the waitress in what part of Mexico was born the cooker, she told me that the cooker was american a white guy. Amazing Mexican food. By the way, I’m Mexican, from Mexico City. The name of the casino is “cast away”

This guy speaks straight facts, the food in Mexico is the best in medium cities that are not tourist centered. I live in Monterrey in the northeast of mexico but my family is from Aguascalientes and I often go there. Aguascalientes has nothing noteworthy except for the city center. But the food is amazing. I have never eating such great food for that low of a price, I really recommend any american to perfect their spanish and go do one of those adventures.

I’m from California and honesty feel we have the best food (although expensive) because of all the cultural influence and farm to table popularity. Such fresh fruits and vegetables all the time. Obviously we have many Mexicans and amazing Mexican food BUT the best food I’ve had when traveling and the food I think about the most is from Mexico. I spent 6 months there. Amazing contemporary food and taquerias in Mexico City, and all the regional food in Oaxaca and Yucatán were my favorites. Not to mention Baja fish tacos!

I am Mexican and left Mexico at 26yo to Argentina and now I live in Brazil. UA-cam recommends me videos about gringos traveling to Mexico and eating in various Mexican cities. I don’t even know half the dishes I see… specially Oaxaca, food looks crazy good there.

I am Mexican and adopted in the US was born in monterrey NL [REGIO] as a child didn't appreciate homemade cuisine didn't realize that it was skillfully prepared with lots of love all those incomparable flavors and mixtures to make one dish, we will eat almost something different everyday if money would allow it, nothing was wasted we will fight for leftovers!! and the desserts oh my gosh!!! my mouth waters as i write, i was an enemy of street food rarely would consume that, but we would hit the small-scale joints that at times was much better that name restaurants, it was the closest to homemade, Mexican culinary art is very extensive every state that you visit you will find something never tried before, that's the result when something is prepared with skill, knowledge and very fine hands just about with anything edible and available for the kitchen

Burritos are from Villa Ahumada/ Ciudad Juárez, in the state of Chihuahua. Hermosillo (state of Sonora) has it's own version (larger and typically with steak) but I don't think it's as traditional. Fajitas I guess are a thing in both those states since they produce prime beef, but Texas does too (possibly even better). But in general the North has so-so food (still better than CalMex or TexMex, yes) compared to the Central, Souther, and Eastern regions of Mexico. The one notable exception is around Ensenada on the Pacific coast, where you can find Baja Med (also available in Tijuana).

I think a big reason Mexican food is so good is because theirs no added bs you got rice beans and protein. Plus veggies and even the sauces aren’t filled preserves it’s just a veggie blended up. It’s just super fresh everything.

yeah, fresh seafood is something else and in the northwest part is where those dishes are eaten the most. Ceviche, aguachile, cocteles y molcajetes de mariscos, ostiones frescos etc.

Hermosillo mean beautiful for a reason. This dude says there is nothing to do, but one of the best all around markets in the world is in Hermosillo. The also have a cool open museum at the university, not to mention the beautiful desert lanscape. But yea, the food in MX is amazing. And he didn't all the other local unreal street food. Cheek and snout tacos. Slow ground roasted sheep soup...

I went to Mexico City and Oaxaca a few years ago and the food is ridiculously perfect. Food that makes you want to cry after taking a bite. I need to go back, and soon.

Im from Hermosillo and was surprised to hear my hometown specifically mentioned. I have to agree that the food from Hermosillo is probably the greatest appeal to the city! The culinary tradition here is very important because there's not a lot else to do jaja, and we have inherited the food culture from all over the rural regions of Sonora from families that migrate to the capital in search of jobs and/or for education.
Usually when talking about mexican food people refer to Oaxaca or other sourthern México regions (and rightfully so, there's incredible food there), but I also know we have our own little food paradise up here!
I have had the opportunity to spend time all over the US and Canada, and I have come to realize I could never permanently move out of here. And I can't lie, it's because of the food!!😂

But Northern Italian food doesn't rely heavily on tomato, but most people are pretty ignorant to how diverse Italian food actually is. It varies from region to region
I remember growing up in Mexico my grandma would cook every single day, there was a lot of kids on our family and not enough money so eating out was rare. She had kids at an young age so she probably started cooking or helping out at the kitchen as a teenager. Many years of experience doing the same thing would make someone good at what they do and have creativity with limited resources. Unfortunately in some areas or families that cooking expertise is being lost due to women joining the workforce, fast food and the refrigeration.

I live in Hermosillo, we're a19th century cattle town with internet, it's true. We have unique spices here too and we do have a lot of small communities that produce raw milk and cheese. But there are also many potent desert hallucinogens like ancestral peyote, eyes of the Shepherdess and the home of the Bufo Alvarius Toad that secrets 5 MEO DMT from it's back... also weed is 1$ per gram. XD
My fam is from Sinaloa right under the state where Hermosillo is and the best food comes from Culiacan, Sinaloa.
Sometimes we drive there and we pass through Hermosillo. The tacos in Hermosillo are top notch!

Some elements of why the food is so good in Hermosillo is that the cattle in our lands drink very hard water, those minerals season the beef, an other thing that seasons the beef is what the cattle eats, the diet that they have is very very rich, that diversity gives our meat a great flavor, so much that you just need to add a little salt in order to make a great carne asada, nothing crazy.

Something else about the meat in Hermosillo, is the fact that meat in Sonora is considered the top of the country, some places like Monterrey in Nuevo Leon will say their meat is the best, but Sonora has the best meat in the country, it is so good, you only need salt, no pepper, no garlic or any other ingredient, no marinate, just add some salt and that's all to the grill, and yea, North of México is flour tortilla territory, specially Sonora, and their tortillas are one of the best, really good place to eat meat.
Interesting, i'm guessing we can't get anything similar stateside? If not, i'm gonna have to try to plan to head down there in my lifetime.
@@jicalzad I live in Baja California, next to Sonora, and people in Mexicali uses the meat from Sonora for their Tacos, they buy it because it is next to them, so I guess yea, you can get meat around, and for my knowledge, Taquerias in Arizona, authentic Mexican taquerias, not Tex Mex, but with actual Mexican owners and workers, of course with Mexican customers they also buy meat from Sonora, so you will have a very similar experience, if not a really close one speaking of Sonora meat and Tacos, there are really good Mexican restaurants around the US, but the key is the owners, workers and most of the customers need to be Mexicans, because Mexicans who actually lived in Mexico will prefer the most traditional, authentic or taste alike mexican recipes and flavors, and who else knows those recipes better than us? no one, so good luck you will find it.
My last meal would definitely be Mexican or Italian

Hi, great analysis, about how the same food, Mexican northern food, tastes different in Mexico than in the USA. I have to say that of course onions and all the veggies matter, because they are usually grown in local gardens on the outskirts of town. I live less than 100 meters from an orchard (Huerto) on the outskirts of a small town in central Mexico: Lagos de Moreno, Jalisco, in the evening I can buy directly from the owner of the orchard the vegetables he is harvesting together with his workers, I usually buy from him onions, garlic, several types of lettuces and cabbages, spinach, chard, tomatoes (red tomatoes, green tomatoes are the "tomatoes", that is an important difference when you go to a traditional market "Mercado", or a street market "Tianguis"). In addition, to these orchards on the outskirts of the city, the region is also known for a great cheese tradition, due to an important migration of Germans in the region of "Los Altos" (The Highlands) of Jalisco, of those cheeses that would be illegal in the United States, it is also a region of cattle and pig breeding, as well as important egg production farms with free range hens, such as "Sanfandila" and "Bachoco". The customers of these local farmers, ranchers, and poultry farmers are the local market, haute cuisine restaurants (there are several of these restaurants, as it is a tourist town being a "Pueblo Magico"), as well as, those of traditional cuisine. Finally, I have to say that: The taste of these traditionally grown products is what gives a great flavor to the food in the restaurants and in every house in all the cities of the center and north of the country.
