For some reason I get the feeling a video is not the best way to experience this.

It's awfully filmed. You do not see the coffee, the bloom or the brew. I feel very frustrated.

Anyone aware of what brand her dosing jars are and even of the overall setup? Very slick.

I’d like to know the dosing jar also! Pretty sure the pour over is called origami dropper. That stand is nice too

Can anyone tell me the method he use to?

She uses 3 pulse pours, first pour at 60 grams with pouring speed of 6g/s. 2nd pour is additional 80 grams (140g) at 4 g/s. Her 3rd pour will be 50 grams (190g) at pour speed of 5g/s. The pulse pour method is similar to the Tetsu Kasuya brew method, and this pour method is popular to extract coffee with the best clarity of flavors, acidity and sweetness. The above is from her speech haha.
