    Paplus, rice and meat, the local and famous dishes of Evaz, were among the most special experiences of my trip to this region at Nariman Ecotourism Residence.
    This is Evaz city in the south of Fars province, which is located 340 km southeast of Shiraz Paplus or ash bread is a traditional and local food of Evaz, a city in the south of Fars province, which has different dishes, such as paplus, which is actually a type of dish you can add tilit (pieces of bread), and they make it with dried shrimp or salted fish, which of course they prepared it with shrimp for us.
    To prepare this dish, onions and dried shrimp are fried, then tomatoes, eggplant, salt, pepper, turmeric and various spices are added to the previous mixture. It is interesting to say that they use eggplant with the top of the green head part and it is very popular. At the end, water is added and it is left to cook for about half an hour, and local dry bread is also added to it to make a wonderful food mixture.
    Next, they prepared Evazi rice and meat for us, which is made from roasted onions, meat, tomatoes and Omani lemon. Then the peas are added and boiling water is added at the end. They leave it to cook for an hour. I mixed it with rice and it was a masterpiece.
