That joke went over your head. The key grip is an important position, but it's down near the bottom of the totem pole. They are never recognized for their role in movie production. They are basically glorified "gophers". They do what they are told. Because of that they have a lot of resentment.
I think it's Ben Stiller's way of recognizing their contribution.

"Man, I don't drop character 'till I done the DVD commentary."
Fun Fact: When recording the audio commentary for the Unrated DVD and Blu-ray, Robert Downey, Jr. actually spends the entire commentary in the character that appears on the screen as the movie progresses.
Historical Fact: The South East Asian gang Flaming Dragon, led by a pre-teen boy, was modeled after God's Army, a guerrilla army in Myanmar. The group was led by twin brothers Johnny Htoo and Luther Htoo, who were nine years old when it was founded in 1997. Johnny and Luther Htoo were fond of American action movie heroes, especially the Rambo franchise.
Cruise Unbound Fact: Ben Stiller said nearly all aspects of the Les Grossman character were developed by Tom Cruise, including the dancing and the look of the make-up. Stiller said that in addition to the more obvious make-up effects applied to Cruise's face and head, and the extra hair on his chest and arms, Cruise also decided to play the character wearing oversized prosthetic hands.

And you will never think about the song Apple Bottom Jeans the same way ever again without referring back to this movie. And the end credit scene was hysterical for the simple reason that they shot it with no music and only added the Ludacris song during post-production and after they got the okay to use it. The only difference is White Chicks required a suspension of disbelief whereas Downey actually looked, sounded, totally disappeared into the part. He's crazy talented, mad acting skills. I disagree with all the controversy. I think blackface should refer specifically to the exaggerated makeup people used to use to make fun of and hurt black people. They would paint their face literally black, not brown. Going for an accurate depiction non-maliciously shouldn't be called blackface. The conflation of these two things is a somewhat recent invention, with this movie being an example. When this came out it was unusual and funny, but it wasn't a controversy. It seems like we're going backwards.

Like most Ben Stiller movies, this was the funniest movie of 2008. Only “Forgetting Sarah Marshall” comes close. Ben Stiller’s ability to get the best casts for his movies is incredibly. This cast couldn’t have been cheap. This movie shows how much faith the studio had in Ben. And I agree that Robert Downey Jr. was the MVP of this movie.

This movie is a parody of the great movie “Apocalypse Now” that suffered many issues behind the scenes and was a nightmare to finish. Apocalypse Now would be a GREAT movie for you to react to and maybe as a bonus you could then watch one of the many documentaries made about it that talk about all its nightmarish struggles like it’s lead character having a heart attack and almost dying had he not CRAWLED for help... Yeah, it was THAT messed up!
