Hey guys! Professional chef that works in a Michelin rated restaurant in SF. I will share my extra delicious Sangria recipe for what it's worth to ya. Use a good DRY red wine. Ingredients: (Stuff that goes into pot): 1 bottle GOOD DRY red wine one stick of dried cinnamon 3Tbs dried juniper berries Approx. 1 cup Fresh squeezed orange juice from two medium sized oranges (or sub fresh squeezed tangerine juice approx. 1 cup or even better, do half orange/half tangerine juice-yer call) Fresh squeezed Lemon juice from one lemon 5 Black cardamom seeds whole 2 Star anise seeds whole (Stuff you add after the pot has heated up and before you cover for 5 min): 4 or 5 Orange peels (minus the pith and about a half-inch wide) 4 or 5 Lemon Peels (minus the pith and about a half-inch wide) *** Pro Tip: Use a potato peeler to pull shallow, pith-free peels off of fruit. 4 or 5 Tangerine peels (minus the pith and about a half-inch wide) (Stuff you add after everything has cooled in the ice bath): 2-3 oz El presidente peach schnapps 2-3 oz Grand Marnier 2 oz xo cognac Procedure: Combine all ingredients in a cooking pot except for the schnapps, grand Marnier, cognac and citrus peels. Turn heat to med lo. Let heat up and stir away boil. Once stirring doesn't stop the pot from boiling, turn off heat, add the citrus peels, and cover for 5 mins. Pour liquid through fine strainer (to remove all the solid bits) into a steel bowl in an ice bath, cover and let sit for a few minutes to cool. Add the schnapps, grand marnier, and cognac, stirring to homogenize mixture and store in a glass of plastic pourable container (like a pitcher) and place in fridge. DO NOT STORE IN ANYTHING METAL. Before serving, set sangria out for twenty minutes to allow sangria to come up to a warmer temperature.
