I am asking because many raw vegans argue that when we cook our food we denature the proteins. But from this illustration it seems like all we need from CONSUMED protein is amino acids.

Your body synthesizes proteins by attaching amino acids to enzymatic biomolecules which then catalyze (with aid from other biomolecules) the connection of these amino acids in a specific sequence that is ultimately determined by your DNA. Vegans are screwballs, your body does not just replace old proteins with full-scale proteins that you ingest from meat, that's just silly :)

What role does renal function play in protein digestion stages.. there's extensive mention of protein being "heavy on kidneys" - The only clue that suggests this likelihood is the simultaneous absorption of water + sodium in the final stage. Would be great to hear more on proteins interaction with the kidneys. Thanks, great lesson all in all 👌
