Beginners Brisket on a fornetto basso 18" smoker

  • This is my first ever video, I am a back yard bbq fanatic that has decided to share my experiences with you.
    This is a full run-through from start to finish, hopefully it helps you bbq some good brisket
    6.5kg full packer brisket smoke low and slow
    14 hour cook time at 225
    Cooked over lump charcoal with a mix of hickory and beech wood
    Wrapped in butchers paper when the internal temp reached 160

    I almost bought this smoker this morning but hesitated because not sure if big enough for a full sized brisket. You certainly proved that the 18” Basso is up to the task. Thanks
    If those rib hanger work as designed I’m all in.

      Its definitely big enough for a full packer brisket and I was super impressed with how it cooked that massive piece of meat. I haven't used the ribs hangers yet as I have a rib rack that I use but I definitely won't to give them a try, I have seen other videos where they have used them as they look to work great.     Hi Lez, love your videos and recipes, they're simple, straight forward and to the point! Would love to see more.....would you be able to do one on the best way to do a whole chicken and another one on 2kgs worth of chicken wings if possible or when you get the chance please? Would be very grateful if you can.

      I had an old beach bbq that I used the grill from. It just fitted spot on which was lucky. Sorry I know that's not much help to your problem

    just purchased my own fornetto basso 18" over the weekend. First smoker. what did you do to yours to stop the smoke leak?

      I bought felt gasket off amazon and it worked a treat on the centre section, it worked for a while on the lid but did come off. My lid has sealed itself now that the bbq has seasoned itself. Hope that helps, will do a video this weekend to cover this 👍

      @@BigLezBBQ appreciate it. im trying make sure i make it as efficient as possible. but cant find any videos on modifications for it, or its counter part bbq's. maybe ill figure it out and make my own.

    Where did you get your Brisket from Les? I smoked a few over the summer on my Fornetto and I think the quality of the brisket was letting me down!

      Sherwoods online, and John Davidson, brisket can be hit and miss, hope you have a great cook with your next one 👍
