There's an unfortunate degree of truth to this song. Press gangs were used by the Royal Navy mostly in the 17th and 18th centuries to crew their ships during a period when recruitment did not yield nearly enough men. The gangs literally consisted of groups of armed navy men who roamed waterfront towns, legally forcing men into service by almost any means. While deserters and merchant sailors were the typical targets, the gangs occasionally pressed landsmen into service as well. The lines where the song's narrator asks about the treatment aboard reflect the fear and uncertainty that would probably accompany abduction by a press gang.
Once aboard a ship, the "recruits" were indeed subjected to the absolute power of the captain, enforced by disturbingly harsh punishments, including flogging as described in the song.
In my experience, impressment in the royal navy tends to be overlooked, both in song and elsewhere, while impressment, and more often shanghaiing, involving merchant ships tend to be recognized more often. Songs like "Liverpool Judies," for example, offer an account of shanghaiing. However, I've not heard many songs that mention impressment in the Navy. Perhaps the lack of songs on the subject reflects the impressed crew members' fear of punishment for singing songs that might have been considered rebellious.

I’ve always wondered, did you have any say in the shanties that were featured in assassins creed, or did they give you a list of shanties to sing?
David Gossage, who produced the sessions, chose all of the songs. He would then send us a batch of songs and we would choose which ones we wanted to sing. I always tried to look over the list quickly so as to be able to choose my favourite songs. Dave had to find songs that could be proven to be as old as the time in which the game took place.

Yes I did. With a bunch of other guys, we did AC3, Black Flag, Rogue, and Unity.
