Begushahi Gosht is now out in the public domain and boy, does it look awesome! Have enjoyed the process of it being prepared, keeping note of all the minute detailing that was captured thru your commentary (Kitna bhoona, lassan pehle, baad mein adrak.... Etc :-) Will be preparing it myself over the weekend and will savour the royal secret!
Raj Singh did a fabulous job - the beauty of the recipe is putting the spices at intervals to retain the aromas...Yes but he is upset that this closely guarded recipe is now public
Mahboob Bhai - Garam Masala yehan pe oil mein temprering ya baghar ke taur pe daala gaya tha. Uska swad alag aata hai aur agar alag se ubalte hui curry mein daalenge to aroma alag tarike se chore ga. Agar aapko vaise pasand hain toh aap beshak vaise daaliye. But there is quite a difference between the flavours imparted when whole garam masala added to hot oil and it is crackling. When adding whole garam masala at a later stage would infuse just suttle aroma into the curry. Both have a different purpose towards the final outcome. I would rather add garam masala powder in small quantity at later stages which would stand out but in balance and not over powering. Aroma into the curry ke baad add this - like it does to a Yakhni.

Mere khayal se garam masala thode later stage me dala jaye toh dish me masale ki khushboo me izafa hoga . Otherwise perfect cooking .
