- The saying “Too many cooks in the kitchen” is not true when I cook with my children.
Daughter no. 3 Alyana is a chef and no. 2 Ynna took culinary lessons and all of my kids know their food! I made sure of that!
In this episode We made Callos. It was my late husband Boy’s favorite and my children love it. It brings back so many memories with every bite.
Callos is a spanish dish that originated in Madrid. It is easy to make and very filling. I hope you enjoy watching and making this dish! Can’t wait to hear your feedback and to learn from you about how you made Callos your own!!!

Well normally or the most common household here in Spain do not serve callos with paella, bec. Both are heavy dishes on their own, it depends on the callos, if its callos madrileña, then it originated from Madrid (normally with garbanzos, but without tomato sauce) ...and the other one which I prefer is the Callos Asturiana which originated in the north of Spain (Asturias) thinly sliced.. normally without the spanish chorizo , and Callos here is served with patatas fritas or fried potatoes ... and a bit of chili oil on the side .. I think filipino callos is a bit different from the authentic one...maybe more suitable for the pinoy's taste...
michael angelo Libunao Hello! My father was born in Madrid. My Grabdmother was from Barcelona. In our household every bday or occassion lengua callos paella were served all at one time. Its a FILIPINO TRADITION in a SPANISH HOUSEHOLD. Just like Kaldereta Adobo Sinigang are all heavy yet we eat them all together. Hahahaha to each his own. Thanks for the info and input. God bless.

You should visit Oviedo (Asturias) when you visit Spain... they have the best (traditional) gastronomy!! Madrid and Barcelona becomes so touristic already ....so a lot of fusion restaurants around (I prefer traditional)..... ♡♡♡♡ God Bless!!! y Besos!!

Callos is from Madrid. Paella is from Valencia. They are two very different regions in Spain; in culture, food, and geography. These foods are only served together in the Philippines, no in Spain.

I'm a bit intimidated with the tripe. Is there anything you place in the pot (where you boil the tripe?) or just place the tripe and water in the pressure cooker and boil away?
I graduated from cca, too. But truth be told, moms cooking is so comforting thats why my mother still cooks in the house.

Tong Duldulao I clean it before and aftwr i cook it in the pressure cooker. just trim out all the excess fats. Wash well. ❤️
