I suppose it's knowing what instrumental is about to drop in from the little samples the DJ gives when he's mixing. As for one-drops, it comes from knowing and watching the DJ.
I guess it comes from the experience, it's part of the profession

It's either going to be full time or half time 140 Bpm, so it's more about adjusting your flow to the rhythm.

beats are beatmatched when mixed, that means the BPM of the beat is going to be the same (most of the time) than the one before, so you flow doesn't have to change. songs also follow an 8/16 bar pattern so the drop is easy to catch
