There is certain standard for street food,Hotel, Motel and Star hotels and i see in this okish hygeine maintained over here.. the normal population of india doesn't mind the kind of state maintained over here for an street food if you need more clealiness then go and search for an clean hotel... also regarding gloves comment indian foods are eaten with hand and prepared by hand if its not then it will lose its taste... for those western guys take a look at kitchen nightmares...
