the curd got curdled when you added, that's not the right way. either add little water first because it lowers heat and doesn't let curd curdle or add a tea spoon of maida in the beaten yogurt and then add.
I have just seen the video, It is wonderfully presented, I , with due respect to your comment, wish to say that water was given just after the beaten yogurt was added to the frying pan, as the water was added immediately after it followed by continuous stirring,, it is perfect there is no such "curdle" . thanks to 'My Kitchen's Magic '.
Dude, this is clickbait! The entire idea behind a roast is to not use oil/ghee for frying. Roast er naam e kichhu akta baaniye diye dilei hoye gelo as if!
