Sodium Citrate is just Baking Soda with Citric acid dissolved in water and then the water boiled out of the pot. Gavin Webber has specifics on his channel, linked in the description box! I love the idea of it after using it here, I've had homemade alfredo sauce "break" into protien and oil and sodium citrate will probably be able to fix it! Winning!

My goodness! I adore this! To have an easy-melting cheese in the fridge from few ingredients that are all easy to pronounce is a huge step to replacing some of the mystery-ingredients in processed foods. I think a lot of people have trouble replacing processed "stuff" because they can't find the flavors or textures of something similar from homemade a lot of times. Bonus to use a cheese your family wasn't eating much of and transform it into something they really like!
We usually get 1 lb of cheese from 1 gallon of milk so you should get a similar sized block when all is said and done! I have about 2 gallons to deal with today too!

I LOVED this video!! I laughed so hard when you said, "stuff doesn't go right all the time"!!! Even though I've been making cheese for years, I'm still amazed that the same recipe can turn out a little different every time! And sometimes a lot different! 😂 The day I left my mild cheddar on the stove warming & ran out to the garden: got sidetracked & came in to find I had mozzarella. Still don't understand that one as I can not seem to get good mozzarella no matter how hard I try!!! 😳🤣 Like you I still buy Velveeta for that 'melty smoothness' so this is going to be a permanent recipe in my cheese file!! Thank you so much for showing possibilities of turning homemade cheeses that might not be as ideal or first eaten, into something else that is so flexible (soup, dips, mac n cheese, nachos, etc)! My family would totally eat that and my hubby would have a happy belly vs making that with cows milk lol I’m in the process of drying my doe off(I’m searching for more goats and waiting for my first fresheners lol) so we bought raw A2A2 cows milk and did a taste test with my kids…they chose the GOATS milk! Lol If any is hesitant just try it…you’ll love it!
You should check out “the Mac’s life”She recently did a video making Velveeta cheese, where she made the WHOLE thing from scratch (no shredded cheese added ) and it was so easy I couldn’t even believe it. I think I could even do it. She used cows milk, but you can use goats milk also

It’s so much easier than all the hard work that you had to do just to get the hard cheese in the first place. That’s if it tastes good to you. I think she said her children had a problem with texture of cheese. That’s why she made this.
The hard cheese was really made to stay as a hard cheese it just didn't turn out right. So instead of never getting eaten or going to the chickens I'm so happy to have had this option!
Hey this is a great idea. Hard cheese making is so hit and miss, will have to give this a try when I go to clean out my cheese fridge. Also I bet you can improve the texture using a stick blender.

Not sure!! The texture might be a little off when thawed but I do wonder if a little re-processing with more sodium citrate could fix it right up. I'll have to experiment with this!
@@SageandStoneHomestead that’s what I followed as well, but got mold in the top … I must have missed a bad tomato or something. It’s the first time I have ever canned anything that grew mold.

Munster cheese is soft and melts very well.

Mine took a little more time to melt vs velveeta but the end result was the same!
