I'm think a high quality polished brass zipper would be better than a plastic one for a $500 satchel.
This is a nice looking bag. I already have a satchel 13 and tac sac and would definitely buy this bag if it was cheaper!
A water bottle holder would be dumb and ugly.

Not heavy at all .. this is not a lot of gear really.
