  • Recipe for Baby Corn Manchuria:
    Ingredients:
    - 10 baby corns, cut into bite-sized pieces
    - 3 tbsp all-purpose flour (maida)
    - 3 tablespoons cornflour
    - 2 tsp soy sauce
    - 2 tsp tomato ketchup
    - 1/4 teaspoon red chili powder
    - Salt to taste
    - Oil for frying
    - 8 cloves of garlic
    - 1-inch ginger
    - 1/2 capsicum
    - Coriander leaves
    - Pinch of turmeric powder
    - 1/4 tsp pepper powder
    - 2 green chillies
    - 1 onion
    - 5 byadagi chillies
    Instructions:
    1. Blend soaked byadagi chillies in warm water with 1/2 onion, 4 cloves of garlic, and 1/2 inch ginger to a fine mixture.
    2. In a bowl, mix all-purpose flour, cornflour, pepper powder, and salt. Add cut baby corns. Add water as needed to make a thick batter and let it marinate for 5 mins.
    3. Dip the baby corn pieces into the batter, ensuring they are well coated.
    4. Heat oil in a deep frying pan over medium heat. Fry the battered baby corn pieces until golden brown and crispy. Remove them from the oil and set aside on paper towels to drain excess oil.
    5. For the sauce, heat 1 tablespoon of oil in a separate pan. Add finely chopped ginger, garlic, green chillies, and fry. Then add sliced 1/2 onion, sliced capsicum, and a little salt. Sauté until the onions turn translucent.
    6. Add chili powder, turmeric powder, soy sauce, tomato ketchup, and the blended mixture. Mix well and cook for 3 to 5 mins on low heat.
    7. Add the fried baby corn pieces to the sauce and toss until they are well coated.
    8. Garnish with chopped coriander leaves and serve hot.
