Made some space in my freezer and headed to Costco now. Since it can be hard for some people (like myself) to cut a consistent thickness across all steaks, here is a cutting tip I learned from my grampa....use the width of your knife as your gauge. Find a knife blade that is about 1.25 inches tall (or as thick as the steak you want). lay the spine at the edge of the meat, now without picking up the knife from the meat, rotate the knife so it is now blade down....away you go. Same size cuts every time.

Cannot thank you enough! Just purchased 3 standing rib roasts at grocery store for $6.99 a pound. Bought as you recommended in the last video a $30 breaking knife. Saved over $200 from the regular price, they cut up into beautiful steaks. And i learned to cut steaks on $6.99 a pound.

I just butchered my first piece of ribeye with my son (bought it from Costco) and it was so easy to do it, just like you’ve showed. We just ate that first butchers slice and it was so dang good. I wanted to thank you for showing it so thoroughly. I’m never going back again to pre made cuts

Where do you live that they are that cheap?
Another cheatcode is to shop standing rib roasts during the holidays (christmas/easter). Publix and other major chains sell them at as much as $8-9/lb savings and you get the ribs as well. Sometimes still attached, others not. I bought 8 last easter and they lasted me a while and I'm full carnivore.
That's exactly what we do. Our local Publix has rib roasts at Christmas at 6.99/lb. We buy about 6 of them and separate the ribs for the smoker. I steak a few out and leave the rest as roasts. Thanksgiving I buy 5 turkeys at .49/lb and Hams at easter for around 1.29/lb. Having a large freezer and a good vacuum sealer is essential.

I did the same. I have bones from three joints in the freezer. I’m going to roast them to make a sauce along with the bones I get from the meat I’m going to buy this Christmas. Yum 🤤

Since watching your video on pork loin and strip steaks, I haven't purchased a steak or anything pork at the grocery store since. Our local grocery stores have ribeye’s on special for $6-$7lb. every few months. Just load the freezers when on special. Rinse and repeat.

As a cook, I know your videos will resonate with the people who are looking to kick their game up. It’s not hard, but you have to know the product you’re asking for which is tough for a lot of folks. Doing the butching thing, most aren’t really comfortable doing it. Going to a COSTCO or other store and paying for a sub primal is daunting. I actually love breaking subprimals down. It reminds me of the animal and the care that we have to display. The same is when you take a whole fish and break it down. There is something special in preserving what you have caught.

During holidays, if you look in the circular coupons (easter/4th july/Xmas) Kroger/Albertsons usually has choice ribeyes for $5.79/lb. I stocked up this year. It's one roast per customer (phone number) so I just go back the next day and get another one with the other phone number. Just FYI costco isn't always the most affordable for meat.

Grocery stores do loss leaders to get you in the store with the assumption that you will buy a lot more stuff. This is why grocery stores sometimes has meat cheaper. They are selling it for less than it cost them. Definitely something to take advantage of.

Really enjoyed a “day with the meat cutter dude”…My father had a meat market when I was growing up. I have 4 brothers and we were learning to cut meat when we were about 7 years old. The older we were the more we got to cut more and better cuts of meat. However it has been so long that I forgot all of the trade secrets…you reminded me how valuable learning the cuts of the meat, locating the prime and sub prime. Those words echoed in my mind and I just sat back and enjoyed listening to the sound of a passionate meat cutter. THANK YOU. Patrick
The trick is being patient and waiting for sales when they come through. The last time i bought a whole ribeye at my butcher it was $8.45 a pound, and i cut out almost 17 ribeyes from it. When we compared it to Walmart we saved a little over $70

So, as the butcher was filling the display case…
I asked, “limit 2?” So he yelled at the other butcher cutting steaks🥩 and asked him to weigh the piece he was about to cut‼The answer was, “ten pounds” and the butcher beside me said, “that will be your first piece!”

Another great video, thank you! What I've been doing for the last few years now, is I wait for Nov and Dec to roll around and when the meat dept at the grocery stores start selling their Choice Strip Loin and Ribeye roasts for 5.99-7.99 lb. for the holidays, I purchase a whole sub primal from them and cut it up myself and vacuum seal and then I have Ribeyes and NY Strips the whole year round. The Chef's Store is a great recommendation if you are near one. For some reason my Costco and Sam's Club do not have great prices on beef anymore. I will also purchase the sub primals for the Chuck Roll and Top Blade (Flat Iron) and section out the cuts as well.
I also wait for those prices at Thanksgiving/Christmas and Easter. Just cutting into rib roasts saves $2 per pound
You can save a lot of money buying chuck eye steaks. They look identical to ribeye as far as marbling goes but they tend to have a bit more fat around the edges. (Not a problem for me 🤪)
It is NOT what most people think of when they think of a cut of chuck steak. You notice when he's describing the parts of the cow there's a transition from Chuck to Rib. The chuck eye is just a little smaller in diameter than ribeye but comes from the same are a little closer towards their shoulder.
Sometimes they're not quite as pretty because it seems to taper down smaller the farther from the rib it goes but I can honestly say there's times I've had chuck eye that was more tender and better flavor than ribeye for 2x the price.
Prices fluctuate by region but I've seen chuck eye as low as half the price of ribeye but it's always at least $5/lb less.

This weekend Local Supermarket in FL( Publix) had bone in rib roasts for $6.99 a pound. got me an 8 pounder roast and got out 5 good steaks plus a riblet for the grill. Thanks for the Video.

I go to the butcher every two weeks and buy a loin/sub primal of bone in choice ribeye. I have them cut it at 1 inch and no trim. Payed 9.99/lb 3 days ago and it fluctuates up to 13.99/lb. You will get an average of around 14 steaks.
Last week I bought all of these that were available from a local grocery store called Box 10. I also bought some new york strips. Saved so much money cutting them myself.

I was at Costco today and the trimmed steaks were the same price per pound as the primal
At my Costco too. Only $.20/lb. difference. I guess that’s how you can get around Costco blade-tenderizing them. But it’s not worth it to me when I have other local grocery stores that have pre-cut ribeye/T-bone, and sometimes even Porterhouses for $5-7/lb.
Go to a farmers market or straight to farmers and buy a quarter of a cow. Stop going to Costco, they are not cheap, I go to Gordon foods store and save over 100$
Farmers here sell their meat for basically the same prices as the stores. There/s no savings.

Wait until a holiday weekend where they expect a lot of BBQ. Memorial day/Labor Day/ 4th of July etc. Go to Safeway (Albertsons) or Frys (Kroger) and you can get a whole ribeye roast (choice) for 4.99 or 5.99 a lb (bone in). I'm in AZ for reference. Safeway cuts into steaks or will cut the ribs off instead for free, Kroger charges usually. Costco is better quality but you are paying over double of what you could be paying. I vacuum seal for freezer storage.. they easily freeze for a year without quality loss that way.
Do you plan on doing the beef tallow video? I would love to see it, so I can use it to fry my potatoes. And I heard a few years ago there are other reasons for tallow.
Maybe you can also do a bone stock from slow cooking bones to make it.
Go to Bumblebee Apothecary’s UA-cam channel. She has a video on how to render your own tallow, its super simple. I just put in in my slow cooker, but she uses a pot on the stovetop.

This trick still saves money under a fair comparison with Costco whole ribeye versus precut. At my local Costco, a whole ribeye is $13.59 per pound (Choice), while precut is $16.99 per pound (also Choice). At an average of 3.25 pounds precut, and 13.35 for whole, you're still saving well over $40. The savings buys you almost an additional precut pack, plus trimmings for ground beef or tallow.
Agree 100%! Only hard paerrt is coming off $180.00 at one time. I understand if your getting for $8 pnd but its still over $100. Main reason we dont eat a lot of steak.

Would love more info about your cutting board. Is it’s better to use wood vs other materials? Should I use it only for meat cutting to avoid cross contamination? Maintenance keeping it clean after use and how to make it last longer or when to replace it? New to butchering and usually just go from precut packages to cooking it so I’m pretty ignorant 😅
Wood is best. If it’s sealed, you can sanitize it with a mild bleach solution and a little detergent. Mild as in you can’t smell it.
Been using my Boos cutting board for 25 years. Nobody has ever gotten sick from my kitchen, and I cut everything on it.
Frequent wiping with a damp towel in solution is all I do.
If you like plastic, go for it.
Yes wood or wood resin, unless you like eating plastic and other chemicals from the plastic cutting board..

I enjoy these videos and have done several ribeyes like this. Unfortunately the last one I bought from a local store in VT I didn't catch was from Mexico and it was the leanest ribeye I have ever seen. Almost no marbling, even at $6.99lb it wasnt worth it.

Why not compare the precut Ribeye at Costco vs the Whole Ribeye at Costco? That would of been a fair comparison IMO. It's not as big a cost difference.
Yes, depending on how they are trimmed up at Costco you may end up paying a little more / lb, but with less fat scraps and no effort or freezing.
i bought a whole fillet from costco, after 1 hr cutting it up and cleaning it up, i saved like 1 dollar. its cool, but time is money too.
@@johnbollinger4896 I bought the whole Costco brisket at $3.99. That was a great deal, “free brisket”. Very little waste after I ground up the trimmings. I blended the ground brisket 2:1 with 80/20 chop meat and made great brisket blend burgers.
@@BP-nj6fi - Let's talk freezing. When you say "no effort freezing" are you simply throwing the steak packs into the freezer right as you buy them without doing anything to them? I've heard, but haven't experimented with it, that the steaks won't last as long that way. When I heard that, I bought a vacuum sealer and never looked back. Now, if I'm not going to eat all the steaks right way in the precut pack, I'll take them out of the pack and vacuum seal them before freezing. I bought the vacuum sealer at Walmart and a box of bags at Costco for under $100 and that's a heck of a lot of bags!! It'll probably seal up 4-6 subprimal roasts cut into steaks.....maybe more. What are your freezing methods?
@@jontnoneya3404 What I meant is buying the Costco butchered steaks you don’t have the volume and can buy what you will use short term, without having to freeze any steaks. For freezing, I generally use zip lock freezer bags. I’m pretty good at getting most of the air out of them. If I were consistently buying bulk cuts and storing for longer periods, I would definitely invest in a vacuumed sealer.
I went carnivore this year so we're having ribeye instead of turkey for Thanksgiving. I'll follow this video to the letter.

I'll take A of course. The first time I bought a whole ribeye subprimal at Sam's (May 23) I got severe sticker shock...$347.00 for 27 lbs of meat, it was prime and it was great. I'm presuming the one you got for 13.49 a lb is choice.
Wait $347/27 = $12.85 per pound. FOR PRIME? That's really an outstanding deal. And yes, the $13.49/lb price is what I'm seeing for Choice at my Costco. Prime goes for like $17.99 or so, it seems to fluctuate more than Choice. It's tough paying all that money but when you look at the per pound rate, and knowing how to properly vacuum seal and then freeze them, it's well worth it!! I haven't seen under $15/lb prices for Prime Ribeye in over a year.

@@steveludwig4200 - CAREFUL - that beef is often NOT USDA graded and it's often raised in Mexico where they can feed the cows anything....even stuff banned in the USA. If it's not graded USDA, Prime or Choice you have to assume it's select grade or even worse. Price isn't the only consideration bro.
@@jontnoneya3404These top tier grocery stores sell ONLY USDA grade meat. The ribeyes I spoke of are either Select or Choice and trust me, even the Select grade ribeyes are excellent as I grill them over mesquite or pecan wood. And these stores also sell Prime Top Sirloin (with the fat cap) for $7.99 when on sale.
I buy straight from the cattle farmer that way I see what I'm getting for sure and the one I deal with Guarantees his beef to be tender, so far it has been good beef, 3 years now buying from the farm.
Thin doesn't cover it I can almost see through that grocery store 'steak'. This is amazing. Thank you so much!

I've never seen a whole ribeye like that in Costco. Do you have to ask the manager or something?
Next time you calculate savings pls remove the weight of the trimmed loss. It would still be a great deal but nice to get an apples-to-apples comparison of trimmed steak. You might also suggest how we might freeze and store these steaks because very few of us have any need for 14 steaks at once. Thank you, great video.
Vacuum seal and freeze until ready to eat. Defrost in the fridge, let it sit out for 30 min before cooking. Season as you like. I cook mine in the air fryer 7 min on each side for a perfect medium rare.

Sorry, I didn’t understand- you cut about 15 steaks but today you need only say two- what do you do with the rest, freeze them? How they will taste after that?
freeze meats good for like 2 years if you butcher block and vacuum wrap
My foodsaver was my best investment ever… I’d have 20lbs of meat at any given time in my freezer, and yes it’s always been fresh once I get to thawing it and eating it.
Meat freezes well. Just make sure it’s thoroughly wrapped so no air can get to it. Vacuum sealed if possible. When you’re ready to use it, thaw it in the fridge on a pan in case it drips.

We have a local meat market that currently has NY strip blocks for $5.99/lb and ribeye for $7.99/lb. I cut 6 NY strips from a ten lb block today.

@jamesnelson1968 do you live in the Tampa area, by chance? I have a place Cacciatore Bros, that has those exact same prices. I've bought both the NYS subs and the Ribeye subs. The Ribeyes were a much better quality than I expected 👍 BTW I do realize it's a crazy question giving the vast scope of the world wide web, just thought those prices were too close to be coincidental 🤷

Pre-cut USDA choice ribeye steaks at Sam’s Club are $13.99/lb right now and I don’t have to worry about storing more than I can eat quickly. I like the idea of cutting your own so you can get them the thickeness you want and trim the fat the way you want but it’s not a huge savings when you get the pre-cut steak from the same source as the whole subprimal.
Exactly. The difference in individual steaks and the hole loin is about .50c per pound. Ive never paid $21lb for even a prime ribeye. Those run about 18-19 per lb

I love this idea, but would have much rather seen a more fair price comparison. For example, a price comparison of ribeye steaks from Costco versus cutting your own steaks from a whole ribeye from Costco. It's not really a fair comparison to compare prices from two entirely different stores.
about $4-6/lb. 'USDA Choice Beef Ribeye Steak, 12 oz, 4 ct' $55.29 Bay Area CA = $17.5/lb. I personally love their bone-in short ribs, they're to die for.

I was at Costco this evening and the pre-sliced ribeye was .20 more per pound.
Already sliced and trimmed is only 50 cents more at Costco in my area, so actually cheaper depending on waste/trimming, plus I can select the ones with the biggest cap when they are precut, so a bigger win.
Costco will blade tenderize the cut meat. Go for the primal.
