Satella is the witch of envy who killed all the witches and went on a rampage destroying most of the world until her body was sealed. She is usually framed for all the wrong stuff in re zero world like creating the demon beast(daphne actually created them). The envy factor she absorbed was unstable and caused her to have two personalities satella and the witch of envy. If you are confused on which is which the one who attacked the sanctuary in episode 9 is the witch of envy personality and the one here is the satella personality(satella = somewhat good and envy = bad). Also the witch of envy personality is theorized by subaru to be the one who doesn't allow him to tell return by death to others. The whole save stuff is something even we don't know.
In this episode of the anime, many important things were eaten that will affect Subaru in one way or another in the future. In the Web Novel right at the Tea Party scene where almost all the witches are, Minerva almost punched Satella because she wanted to check if it was her or "The Witch of Envy" which begins a short explanation of that "The Witch of Envy" is an alternate personality that controls Satella's body and that she was the cause of all the destruction that happened 400 years ago that caused a great disaster throughout the world of Re:Zero, just like her is the one that chases Subaru when he breaks the "Return of Death" rule. They also give the information that all the witches except Minerva died due to circumstances different from those told by everyone (That the Witch of Envy killed all the Witches) and that the other Witches like Satella, also in the scene where Satella tells her how much he wants Subaru to love himself, he tells him how Subaru saved her and at that moment he feels a pain in his heart as if those words weighed on him, as if he knew about it. Which is related to something that will be told in the future and that is SPOILER
Although I’m not too sure, my theory is that there are two parts to the Witch. One part is their humanity and the other is their sin. One example would be Satella and the Witch of Envy where the real Satella is the one that told Subaru to love himself more while the Witch of Envy part is the one overwhelmed by envy and jealousy.
It's not explained in the anime but taking Echidna's contract would have been catastrophically bad for Subaru. In her quest for all knowledge, she would have him try all sorts of things AND DIE so she could learn what happens. The option of taking Echidna's contract is the subject of one the "If" novels. It Does Not End Well (I'm told).
