What Do I Eat Living in a Van? [REAL]

  • It might not be the most glamorous menu, but I wanted to share my method for meal-prep that I use exclusively while living in a van. I have a limited amount of kitchen tools/appliances so it has taken me a while to find an efficient way of cooking while living on the road. When you live in a vehicle efficiency is key, so albeit a little repetitive and pretty basic, this is what works for me.

    I'm very impressed with your ability to eat basically the same 2 meals for a week on end and not get sick of them. That must help a lot with consolidating groceries and saving fridge space in the van

    The stir fry burrito has enough variance in ingredients for it not to feel like the same meal every time, which is cool.

    Love the comments you get that "things are very real" and to that effect. :-) Yep, agreed!
    One slightly less obvious thing that contributes to repetition in food choice is that, for a single person, there is a certain amount of repeating that has to be done just to get through the minimum food purchase. We can't generally buy a half a bell pepper, for example. At least, not where I shop. Trend is in the other direction (packet of 6, for example!).

    Food looks pretty good to me - and I cook and camp pretty well, maybe a bit more healthy without chips/jelly beans. One thing, if you made those breakfast burritos into two so they aren't so awkward, then pop them back on the fry pan and brown all sides - makes them really yummy.

    I have a biolite with grill unit. I make fresh bread on it everyday. When I want to eat bread I cut the disc in half and toast it on the grill again, so I am always eating toasted bread with butter, jam or cheese. When you figure this out you feel like the luckiest person in the forest alive.
    What is bread? its organic wheat or spelt flour, salt, yeast or baking powder and a little bit of oil. If you let the bread sit with only yeast for a few hours or longer I get the best results, the longer the better.

    Interesting. Tip: cut the salad bag long ways and mix all the other little bag ingredients right in the salad pkg. No dishes. Yw

    I wish I had your metabolism! That's interesting about the soda in Canada. I must try it. I was thinking you could just useore than one tortilla for those huge ones but then I thought it would be a waste really. So now I have to rethink burritos. Hehe happy trails!

    You can cook most of what people do at home, it seems. Not sure about frozen dinners or baking, though. I don't eat frozen dinners but I bake bread on occasion, eat it as the primary source of calories on some days. However, I can get by with whole wheat pasta and black beans, which is cookable on a stove.

    Great video, Max, and most interesting to learn about what you eat while on the road. For those of us who are sugar-addicted, it is hard to cut that out, but I like the one person's comment about incorporating nuts into your diet. They are pretty high in protein and whatever fat content in them is the good kind of fat. Glad to see you back in the states! 😊

    Nice video Max. i love sugar like you do lol...but i tried to reduce it. what i can recommend is snacking some walnuts instead of chips or sweets. nuts are healthy af and a handfull walnuts/day is a great addition to the diet. and i stopped drinking soda! only water, coffee and sometimes beer (mostly alcohol free) the older you get, the more you realize how important a healthy diet is...

    I found out the 'blue dot' new video alert for dusty odyssey is Max, our dusty Greek hero backcountry wanderer.
    Really enjoyed this. I like the way you fold everything into a Burrito. I can eat all manner of healthy as long as it's in a sandwich. Lay it out on a plate and I can't get passed eyeballing it.

      I agree, everything healthy has to be packaged with a carb somehow, bread, tortilla, pasta, doesn’t matter 😂

    Great video! Really appreciate the honesty sharing what you truly intake daily (healthy or not). Next time you should also show the calories burned daily to see where you are at (sure you must have an app or some sort of tracking device). You are young, so your metabolism is still good burning calories pretty readily, but what you do now really effects your future. May I suggest cutting 25% of your treats as a start and see how your body reacts. Again, I am not a dietician so you should really seek professional help. Thanks gain and be safe!

      Thanks! Yeah, the empty carbs are killer, and I have been gaining weight, which is why I did this. I don’t trust apps to accurately track calories burned, just too many variables in my opinion.

      @@dustyodyssey Agreed about the inaccuracy of the various Apps and Trackers, but it's a starting point. I personally take as much as a 10% calorie burn reduction.

      Those were, no joke, the best tortillas I could find in the Yukon. 🤷‍♂️

    I don't understand why everyone thinks the Walmart parking lot is a free campground. It's not! I've actually shopped at Walmart for groceries and i came out and had a camper parked so close to my truck that I could not get in the drivers side of my truck. I knocked on his camper door and asked him if he would move his camper and he decided that he wanted to fight me. I went back into the Walmart and spoke with Walmart manager who then phone the police. The police came out and told the camper that he had to leave the Walmart parking lot because it's not legal to camp in the Walmart parking lot. Now a lot of Walmarts have signs in their parking lots that say no camping.

      Walmart used to allow overnight parking at every store until it started causing problems. Like you said, most Walmarts no longer allow overnights. I asked at customer service at both of these locations and they said I was ok to spend 1 night. They also told me where to park in the lot so I was far away from other customers. Sorry about your bad experience 🙁

    I'm diabetic so your diet would be very bad for me😮. Also a good idea to up the protein and lower the carbs. Plus keep an eye on fibre as well.

    The issue is….’van life’ is not your identity, and if it is you are farked… life is what happens whilst you happen to be living in a van. If you don’t see that you will be forever trying to work out why you have no friends.

    so ya must be a vegetarian? i'd be concerned with the fats being so omega6 heavy - the lead indicator in prediabetes. You're young enough now that you won't notice it. But when you're 58 ya will notice it. Ain't nothin wrong with vegetables, but a steak will keep ya full and not snackin. snacks are what get ya into trouble with the omega6 stuff. Of course - myyyy opinons.
