- BROCCOLI-RICE CASSEROLE
10 ounce package FROZEN BROCCOLI CUTS
2 to 4 tablespoons BUTTER
1 cup chopped CELERY
1 cup chopped ONION
1 cup MINUTE RICE, instant
(1) 10.5 ounce can CREAM OF MUSHROOM SOUP
1 cup CHICKEN BROTH
15 ounce jar CHEEZE WHIZ (Velveeta can be substituted)
Sauté onions and celery in butter for 3 to 5 minutes until softened. Add all other ingredients and stir together. Pour into a casserole dish sprayed with non-stick cooking spray for easy clean up. Bake COVERED at 350 degrees F for 45 minutes and then Uncovered for 15 to 20 minutes to toast the top.

I make this dish every Thanksgiving. My whole family loves it. I use cream of celery in it and I don't put chicken broth in it but that sounds better than the water I put in it. I might use that this year . Thanks and hope you and your family have a wonderful Thanksgiving

Hey my sweet friend! Hope you and your family have a very blessed Thanksgiving! I'm not able to cook anymore, my Gastroparisis has really taken a toll on my body. I have lost 80 lbs, I am now in a hospital bed at home wearing oxygen. I go the 29th to see the Pulmonologist and probably will probably have to have a sleep study done. Tell John congratulations on the 8 point! I have home health nurses, aides, social services, and physical therapy coming in and out so that helps not only me, but my husband, it gives him a break! My physical therapist just came in so I must go. Love y'all!

Mine is similar, but no Cheese Whiz, just a package of shredded cheddar cheese. No chicken broth but a stick of melted butter *in* the broccoli rice mixture.
Think I will add some chicken to this dish
