You cannot check after someone makes a bet in Poker. If someone makes a bet, you can either call it (pay the exact same amount) or Raise (and force the other player to pay the extra amount that you added into the initial bet)

I don't know about the side pot, but the blinds take money alternating from players to add to the pot. They increase it so you have to increase the stakes throughout the game.

If there are three or more players and the poorest player goes all in, that's considered the highest the Main Pot bets can go; if the other two players go higher, it creates a Side Pot that the third player doesn't compete in. I think there are also other ways it can happen, but that's the most common. As an example, watch 17:40 carefully. Notice that Tycho goes all-in with his remaining $2400, and Max subsequently goes all-in with $4200, which the Player calls. All three players compete for the Main Pot of $13,200, while Tycho is not part of the Side Pot made by Max and the Player worth $3,600. Tycho and the Player both lose to Max's straight in this scenario, so Max takes all the chips from the Main Pot (busting Tycho in the process) and also takes the Side Pot (beating the Player's Ace High). If Tycho had the Straight and Max had the Pair, then Tycho would've won the Main Pot (which wouldn't bust anyone), but Max would still have won the Side Pot (A Pair is better than Ace High) and avoided busting out, because that pot is only between you two. Hope this explanation is sufficient!
